Location: Western Cape (Cape Town Region)
Salary: R40,000 – R50,000 per month (CTC)
Reporting to: Regional / Group Butchery Management

Job Overview:

A leading retail group in the Western Cape is seeking an experienced Butcher Buyer to manage the procurement and supply of meat products across stores. This role requires a strong combination of technical butchery knowledge and strategic buying expertise.

The successful candidate will be responsible for sourcing quality meat products, negotiating pricing with suppliers, managing margins, and ensuring consistent stock availability while maintaining strict quality and food safety standards.

This is a senior-level retail butchery role suited to someone with solid supplier relationships and proven buying experience within the meat industry.

Key Responsibilities:

• Source and procure beef, lamb, pork, poultry, and value-added meat products

• Negotiate pricing, contracts, and terms with suppliers

• Manage supplier relationships and performance

• Monitor market trends, pricing fluctuations, and product availability

• Ensure optimal stock levels across stores

• Manage GP margins and control shrinkage

• Conduct quality inspections of incoming products

• Work closely with store butchery managers and regional management

• Ensure compliance with food safety and hygiene regulations

• Oversee product costing and pricing strategy

• Identify opportunities for cost savings and improved supply chain efficiencies

Minimum Requirements (Non-Negotiable):

• Minimum 5+ years experience in a senior butchery role

• Proven experience as a Meat Buyer within retail or wholesale

• Strong negotiation and supplier management skills

• In-depth knowledge of meat grading, cuts, yields, and pricing structures

• Strong understanding of GP, margin control, and stock management

• Experience working within a retail supermarket environment

• Computer literate (ordering systems, Excel, stock systems)

• Valid drivers licence and own reliable transport

• Must reside in or be willing to relocate to Western Cape
