Job Description - Executive Sous Chef


Executive Sous Chef | Luxury Hotel | Knysna

Kendrick Recruitment is seeking a highly skilled and motivated Executive Sous Chef to join the culinary team at a luxury property in Knysna. This role requires strong leadership, operational management, and a passion for delivering consistently high-quality cuisine in a fast-paced hospitality environment.

Live-out position (valid South African ID required)

Salary offered in line with experience

Key Responsibilities

Lead the kitchen team to deliver meals of consistently high quality

Manage stock control, ordering, rotation, and regular stock takes to meet gross profit targets

Cost, implement, and train staff on existing and new recipes

Build strong supplier relationships, ensuring access to the best quality produce

Maintain excellent kitchen hygiene standards at all times

Liaise with guests and other departments regarding dietary requirements, events, and complaints

Apply computer literacy skills, with willingness to learn and use property and stock management systems (e.g., Nebula)

Support the General Manager and F&B Manager with any reasonable duties to ensure smooth hotel operations

Human Resources Responsibilities

Motivate and manage the kitchen team effectively

Drive performance management and staff training initiatives to empower the team with new skills

Oversee kitchen rosters, ensuring coverage and making adjustments as needed

Conduct counselling sessions and disciplinary action when required

Manage induction and basic training for new kitchen employees

Minimum Requirements

At least 2 years’ experience in a similar position within a busy restaurant or hotel kitchen

Relevant culinary qualifications and proven operational knowledge

Strong leadership, communication, and organisational skills

Valid South African ID
