Chef de Partie (Pastry Experience) | Luxury Safari Lodge | Pongola, KZN


Kendrick Recruitment is currently seeking a talented and passionate Chef de Partie with strong pastry experience for a luxury safari lodge located in Pongola, KwaZulu-Natal.


This is an exciting opportunity for a skilled culinary professional to join a high-end kitchen team within a fast-paced luxury hospitality environment, delivering exceptional five-star cuisine with a strong focus on precision, creativity, and consistency.




Location: Pongola, KwaZulu-Natal



Accommodation: Live-in



Salary: R15,000



Role Purpose


The Chef de Partie will be responsible for managing a specific section of the kitchen, with a strong focus on pastry production, ensuring the delivery of high-quality dishes that meet luxury lodge standards. The role requires strong technical skill, creativity, and the ability to perform under pressure while maintaining exceptional attention to detail.


Key Responsibilities


Food Preparation & Production




• Prepare and present dishes within the assigned section to the highest standard



• Ensure consistent quality, taste and presentation in line with five-star lodge expectations



• Contribute to menu development and daily specials as required by senior chefs



• Maintain excellence in pastry production and plated dessert presentation



Teamwork & Kitchen Support




• Supervise and support junior kitchen staff within your section



• Assist in training and mentoring team members in culinary techniques and hygiene standards



• Communicate effectively with other kitchen sections to ensure smooth service flow



• Support other sections or functions when required during service periods



Quality & Standards




• Maintain strict hygiene, safety and sanitation standards in line with HACCP requirements



• Ensure proper food storage, handling and labelling at all times



• Uphold five-star presentation and consistency standards across all dishes



• Report any equipment faults or maintenance issues promptly



Stock & Operational Efficiency




• Assist with stock control, inventory management and portion control



• Monitor stock levels and communicate shortages to senior kitchen staff



• Minimise food waste through careful planning and execution



• Support accurate kitchen reporting and stock procedures



Guest Experience




• Ensure all dishes are prepared in line with guest dietary requirements and preferences



• Maintain awareness of special requests and personalised dining experiences



• Contribute to delivering memorable dining experiences within a luxury safari setting



Requirements




• Proven experience as a Chef de Partie within a high-end or luxury hospitality environment



• Strong pastry experience essential



• Solid knowledge of both classical and modern culinary techniques



• Strong understanding of food safety, hygiene and HACCP standards



• Ability to work efficiently under pressure in a fast-paced kitchen



• Strong organisational and multitasking abilities



• Team player with leadership potential and a positive attitude



• Attention to detail and commitment to excellence
