Key Responsibilities
• Section Management: Take full operational ownership of your assigned kitchen section (Hot, Cold, Pastry, or Pass) ensuring flawless service delivery.
• Culinary Excellence: Plan and execute precise daily mise-en-place and plate upscale dishes according to exact reserve recipes and strict 5-star presentation standards.
• Safari-Style Catering: Prepare diverse dining styles unique to the bush, including luxury interactive boma dinners, open-fire cooking, delicate high teas, and elegant multi-course breakfasts and lunches.
• Dietary Adaptability: Confidently accommodate custom guest dietary requirements, allergies, and special culinary requests on short notice.
• Leadership & Mentorship: Supervise, train, and guide junior kitchen staff (Commis Chefs and kitchen porters) to maintain a cohesive, disciplined, and positive kitchen brigade.
• Kitchen Hygiene: Strictly enforce food safety, strict stock rotation (FIFO), cost control, and HACCP standards.
Requirements
Requirements & Qualifications
• Education: A recognized professional culinary certificate or diploma.
• Experience: Minimum of 3–5 years of professional kitchen experience, with at least 2 years in a 4 or 5-star luxury lodge, boutique hotel, or premium fine-dining environment.
• Technical Skills: Strong plating aesthetics, advanced flavor pairing skills, and absolute precision under high-pressure service periods.
• Lodge Mindset: Comfortable living and working in a remote, pristine wilderness environment, operating on a flexible hospitality roster (long hours, weekend, and holiday shifts).
