Job Description - Senior Sous Chef

Senior Sous Chef | Luxury Hotel | Cape Town

Kendrick Recruitment is currently seeking a skilled and motivated Senior Sous Chef for a luxury hotel in Cape Town. This is an excellent opportunity for a passionate culinary professional to join a high-performing kitchen team within a premium hospitality environment.

Key Responsibilities

â¢ Supervise and support daily kitchen operations in line with senior management direction

â¢ Assist with planning, organising and coordinating kitchen workflows and service delivery

â¢ Ensure high standards of food preparation, presentation and timing at all times

â¢ Prepare and cook dishes to required standards, assisting across all kitchen sections when needed

â¢ Support menu planning and recipe development alongside senior chefs

â¢ Train, mentor and support junior kitchen staff

â¢ Ensure compliance with health, safety and hygiene standards

â¢ Assist with stock control, ordering and monitoring kitchen supplies

â¢ Manage stock rotation and minimise food wastage

â¢ Assist with stock takes and monitor kitchen costs

â¢ Support recipe management, updates and staff training on new dishes

â¢ Ensure all kitchen areas are clean, organised and properly maintained

â¢ Assist with staff performance management and operational discipline where required

â¢ Report equipment faults or hazards and support maintenance processes

â¢ Handle general kitchen administration and operational duties as required

Requirements

â¢ Certificate or Diploma in Professional Cookery

â¢ Minimum of 2 years' experience in a similar kitchen role

â¢ Strong culinary skills with excellent attention to detail

â¢ Solid understanding of kitchen operations, stock control and food costing

â¢ Ability to work effectively under pressure in a fast-paced environment

â¢ Strong leadership qualities with a hands-on approach

â¢ Excellent teamwork and communication skills

â¢ Strong understanding of food safety and hygiene standards

â¢ Passion for culinary excellence and continuous professional development
