Hot Deli/Bakery Specialist

SUMMARY:
Our client in the FMCG industry is seeking a competent Deli/Bakery Specialist to join their busy team in Pinetown, Durban.

POSITION INFO:
Duties:
DELI & CFC

• Developing of new food recipes
• Costings of new recipes
• Menu design
• Ordering stock for new store openings
• Ordering deli equipment for new store openings
• Staff training in-store
• Checking gas usage is in line with production and sales
• Assisting stores with stock orders –understock and overstocks
• Implementation of cooking order range (time specific shortest cooking time product first in the morning.
• Involved with new store openings and revamps
• Programming and commissioning of new equipment for department
• Checking all product ranged for department are scanning at tills
• Checking and calibrating weighing scales
• Making sure staff are adequately trained in reading recipes correctly
• Conducting spot checks to ensure accurate weight, pricing, and product descriptions to prevent loss to customers and company.
• Ensuring the department complies with food safety legislation
• Conducting checks to ensure the departments are clean and equipment is in good working order.
• Ensuring that shrinkage control in department
• Assisting with food preparations
• Conducting demos and food tasting for customers
• Analyzing competitor activity
• Conducting price surveys of competitors' products.
• Identify ways to increase sales and gross profit
• Assisting stores with production planning.
• Implementing the correct food range to be available at certain times during the day e.g., breakfast lines in the morning.
• Checking all stock from the shop floor has been cancelled by security.
• Unblocking the Henny Penny fryer to save to call out cost for repairs
• Making sure all customers' complaints are resolved timely and in a professional manner.
• Driving sales through innovation of unique products
• Facilitating cross training of staff in multiple roles (cook & deli assistant)
• Conducting quality assurance checks throughout the day food safety.
• Creating competition amongst stores
• Monitoring operational expenses and gross profit
• Sourcing of equipment quotations
• Comparing of quotations
• Conducting store visits

• New product development
• Ordering equipment for new store openings
• Ordering stock for new store openings
• Providing specialist advise on all matters relating to baking division
• Staff training in store
• Requesting supplier training with regards to new product launch.
• Costing of finished product
• Conducting safety and hygiene inspections
• Communication link between stores, buyers and distribution centre (DC)
• Controlling ingredients utilized in bakery division
• Controlling stock and distributing overstocks to other stores
• Managing products levels against sales
• Driving sales through promotions
• Maintaining a clean and organized bakery division
• Addressing customers complaints and queries
• Reporting any defective equipment to store and area managers
• Source quotation for all bakery equipment.
• Minimizing waste in bakery division by (controlling yeast products production)
• Conducting price surveys.
• Working closely with the buying division.
• Conducting store visits
• Conducting supplier visits
• Communicating with supplies with regards to faulty equipment
• Testing of repaired equipment to make sure it properly repaired

• Diploma in Food Technology or Related.
• Own reliable vehicle
• A valid driver's license
• Minimum of 5 years experience.
• Must be willing to Travel to the various Stores
