Venue Manager – Capítulo Wine Bar & Café @ Casa Roca Palma (Pre-Opening)

Are you a dynamic, hands-on hospitality leader ready to make your mark on Palma’s food and wine scene?

We are looking for a passionate Venue Manager to lead the pre-opening and daily operations of Capítulo, a vibrant new wine bar and café located inside the incredible 1920’s Art Deco masterpiece, Casa Roca, right in the historic heart of Palma. We have 1400 bottles of wine on display and more than 40 local Mallorcan wines in our magical wine machines for people to try by the glass. We can’t wait to get started taking our guests on a gastronomic journey through Mallorca.

Capítulo isn’t just a hotel bar; it is a flagship destination designed to appeal to Mallorcans and international visitors alike, 365 days a year. From specialty morning coffee, breakfast / brunch service to evening Mallorcan wine and curated tapas, you will be the face and the engine of this unique venue.

What You Will Do

• Build Your Dream Team: You will hire, onboard, train, and inspire a diverse team, including FOH café staff and BOH kitchen assistants (focused on high-quality, pre-designed tapas and “lite” bites).
• Run the Show: Oversee a seamless 7-day-a-week operation (08:00 to 23:00), ensuring the energy and service are flawless from the first espresso to the final glass of Callet.
• Own the Business: Take full P&L responsibility, managing ordering, stock control, and vendor relationships working directly under the Hotel General Manager.
• Host the Room: Be the ultimate host. You love being on the floor, sharing stories about local wines, and creating a welcoming atmosphere for our guests.
• Grow with Us: As the venue establishes itself, your leadership scope will expand to oversee the dedicated staff of our in-house gourmet masterclass program, Tasting Palma.

Who We Are Looking For

• The Experience: Proven management experience running a high-volume, premium wine bar, café, or tapas restaurant. You know how to manage both front-of-house flow and a light-meal kitchen operation.
• The Leader: A driven, empathetic manager who knows how to retain staff, build a positive culture, and lead by example during a busy service.
• The Communicator: You are fluent and comfortable hosting in Mallorquín, Spanish, and English (German would be a fantastic bonus!).
• The Entrepreneur: You treat the P&L like it’s your own business and have a sharp eye for detail, margins, and operational efficiency.
