Job Description - Chef de Cuisine - Italian Chef

  • Develops, designs, or creates newapplications, ideas, relationships, systems, or products, includingartistic contributions forrestaurant.
  • Supervisesrestaurant kitchen shift operations and ensures compliance with allFood & Beverage policies, standards andprocedures.
  • Maintains foodpreparation handling and correct storagestandards.
  • Recognizessuperior quality products, presentations andflavor.
  • Plans and managesfood quantities and plating requirements for therestaurant.
  • Communicationsproduction needs to keypersonnel.
  • Assists indeveloping daily and seasonal menu items for therestaurant.
  • Ensurescompliance with all applicable laws and regulationsregulations.
  • Followsproper handling and right temperature of all foodproducts.
  • Estimates dailyrestaurant productionneeds.
  • Prepares and cooksfoods of all types, either on a regular basis or for special guestsor functions.
  • Checks thequality of raw and cooked food products to ensure that standardsare met.
  • Determines howfood should be presented and creates decorative fooddisplays.

  • Supervises andcoordinates activities of cooks and workers engaged in foodpreparation.
  • Utilizes interpersonal andcommunication skills to lead, influence, and encourage others;advocates sound financial/business decision making; demonstrateshonesty/integrity; leads by example.
  • Leadsshift teams while personally preparing food items and executingrequests based on requiredspecifications.
  • Supervises and managesrestaurant kitchen employees. Managing all day-to-day operations.Understanding employee positions well enough to perform duties inemployees' absence.
  • Encourages andbuilds mutual trust, respect, and cooperation among teammembers.
  • Serving as a role model to demonstrateappropriate behaviors.
  • Ensuring and maintainingthe productivity level of employees.
  • Ensuresemployees are cross-trained to support successful dailyoperations.
  • Ensures employees understandexpectations and parameters.

  • Understands theimpact of kitchen operation on the overall property financial goalsand objectives and manages to achieve or exceed budgetedgoals.
  • Effectively investigates, reports andfollows-up on employee accidents.
  • Knows andimplements company safety standards.
  • Ensuring Exceptional CustomerService

  • Providesservices that are above and beyond for customer satisfaction andretention.
  • Manages day-to-day operations,ensuring the quality, standards and meeting the expectations of thecustomers on a daily basis.
  • Improves service bycommunicating and assisting individuals to understand guest needs,providing guidance, feedback, and individual coaching whenneeded.
  • Sets a positive example for guestrelations.
  • Emphasizes guest satisfaction duringall departmental meetings and focuses on continuousimprovement.

  • Handles guestproblems and complaints.

  • Identifiesthe developmental needs of others and coaching, mentoring, orotherwise helping others to improve their knowledge orskills.
  • Participates in training restaurantstaff on menu items including ingredients, preparation methods andunique tastes.
  • Manages employee progressivediscipline procedures.
  • Participates in theemployee performance appraisal process, providing feedback asneeded.
  • Uses all available on the job trainingtools for employees.
  • Assists as needed in theinterviewing and hiring of employee team members with appropriateskills.

  • Providesinformation to supervisors, co-workers, and subordinates bytelephone, in written form, e-mail, or inperson.
  • Analyzes information and evaluatingresults to choose the best solution and solveproblems.
