Job Description - Executive Chef

Displays a friendly, helpful, and cheerfulattitude while communicating effectively with our guests and fellowcolleagues in order to support Miral's strategy and values.Represents and promotes Miral in a positive manner at all times inorder to maintain a professional brand image for all concernedstakeholders. Contributes to achieving departmental and companyobjectives, action plans, and key performance indicators. Enforcesand adheres to all UAE laws, health, safety, and environmentalpolicies, as well as industry and company rules and regulations,reporting any safety concerns or incidents to management in orderto minimize risk and maintain a clean, safe, and hygienicenvironment for all guests and colleagues. Adheres to all emergencyprocedures, ensuring guest safety, and participates in anevacuation if necessary. Available and on duty during peak periods(frequently opening and closing the operation) and regularly workin the outlet kitchens with the respective sou chefs. Frequentlytest kitchen recipes in all Miral facilities and be demanding andcritical when it comes to standards. Assigns responsibilities tosubordinates and checks their performance periodically.Collaborates with the outlet managers and respective outlet chefsto take corrective action where necessary. Ensures correct handlingand basic maintenance of machinery and tools in the kitchens acrossMiral facilities. Ensures orderly handling of all products andchecks that quantities prepared are according to recipes and platespecifications. Monitors and analyzes the activities and trends ofcompetitive restaurants, theme parks, and food and beverageestablishments. Provides courteous and professional service at alltimes. Ensures accurate maintenance of recipes, conversion recipes,yield tables, and product specifications. Ensures that all meetingsare well planned, efficient, and result oriented. Plans workassignments based on occupancy forecasts and work and adjustsschedules to meet emergencies. To ensure and enforce the respect ofthe HACCP Manual at all times. Undertakes any reasonable tasks andsecondary duties as assigned by the senior executivechef.
