Job Description - Head Butcher & Fishmonger - (Modern Restaurant Group)

Join a Modern Restaurant Group that is a leading name in Dubai’s luxury premium scene. We are seeking a dual-skilled professional to lead the protein program within one of our premier, established operations. This role is designed for a master of the craft who combines technical excellence in butchery and fishmongery with the charisma to engage with a high-end, discerning clientele.

The venue is a highly respected culinary destination known for its commitment to sourcing world-class ingredients and providing an interactive, artisan experience. As a key member of an existing and successful team, you will be responsible for maintaining the highest standards of product quality and guest interaction that the brand is known for.

Key Responsibilities

  • Technical Mastery: Expertly prepare, cut, trim, and portion a diverse range of premium meats and seafood to exacting brand standards.
  • Inventory & Aging: Oversee stock control, manage specialised aging processes, and coordinate with suppliers to ensure consistent quality.
  • Guest Engagement: Act as the subject matter expert on the floor, providing recommendations on cuts, flavour profiles, and cooking techniques to enhance the guest journey.
  • Operational Excellence: Maintain rigorous hygiene, safety, and food handling practices in strict accordance with Dubai Municipality guidelines.
  • Team Collaboration: Work seamlessly with the kitchen brigade to ensure the daily supply of protein meets the demands of a high-volume, luxury service.
  • Quality Control: Monitor storage, portioning, and display to minimise waste and ensure 100% product freshness.
  • Proven Expertise: 5–8+ years of experience in a high-end butchery or fishmonger role within a luxury hospitality or premium retail environment.
  • Language Skills: Fluent English is essential; the ability to engage naturally and professionally with guests is a core requirement.
  • Technical Precision: Advanced knife skills and deep knowledge of both carcass butchery and seafood preparation.
  • Professionalism: Polished appearance, energetic personality, and a passion for food craftsmanship.
  • Current Status: Must be currently based in the UAE and available for an urgent start.
  • Monthly Salary: AED 10,000 – 12,000 (Tax-Free) - depending on experience.
  • Health: Comprehensive medical insurance provided.
  • Travel: Home flight ticket (every 24 months).
  • Lifestyle: Duty meals, uniform, and a 6-day work week.
