We are searching for a talented and inventive Head Robata Chef who possesses a deep understanding of Japanese grilling techniques and a passion for showcasing the natural flavours of premium ingredients. The ideal candidate will lead our robata kitchen with finesse, creating inspired dishes that captivate the palate and elevate the dining experience. Key Responsibilities: 

- Lead the robata kitchen with creativity, precision, and passion, overseeing all aspects of grilling, including menu development, ingredient sourcing, and grill maintenance. 

- Develop and execute innovative robata menus that highlight the flavours and textures of seasonal ingredients, while showcasing the artistry of Japanese grilling techniques. 

- Train, mentor, and inspire our culinary team, providing guidance on robata cooking methods, flavour profiles, and presentation to ensure consistency and excellence. 

- Collaborate closely with the Executive Chef and culinary team to create cohesive menus that integrate robata offerings seamlessly with other culinary specialties. 

- Ensure compliance with all health, safety, and sanitation regulations, maintaining a clean and organized robata kitchen at all times. 

- Stay abreast of industry trends, sourcing the finest ingredients, and exploring new techniques to continuously elevate our robata offerings and enhance the dining experience. 

Requirements: 

- Proven experience as a Head Chef or Lead Chef in a high-end restaurant or luxury hotel environment, with a focus on Japanese cuisine and robata grilling. 

- Expertise in Japanese grilling techniques, including binchotan charcoal grilling, yakitori, and robatayaki, with a keen understanding of flavour development and grill management. 

- Creative flair and culinary vision to develop innovative robata menus that celebrate seasonal ingredients and showcase the artistry of Japanese grilling. 

- Strong leadership abilities with a passion for mentoring and developing culinary talent. 

- Exceptional organizational skills and attention to detail, with the ability to manage multiple responsibilities effectively in a fast-paced environment. 

- Excellent communication and interpersonal skills, with the ability to collaborate effectively with the culinary team and other departments. 

- Knowledge of health, safety, and sanitation regulations and best practices in robata grilling and kitchen operations.
