Assistant General Manager - Jamie Oliver Catherine Street

In November 2023, Chef and Campaigner Jamie Oliver returned to the UK’s restaurant scene with a brand new opening: Jamie Oliver’s Catherine Street. Housed in a Grade I listed building in London’s Covent Garden, Catherine Street is an independent, produce-focused restaurant.

Within the 130 cover space, diners can expect favourite dishes from Jamie along with new recipes bespoke to Catherine Street. Coming from a family of publicans and having yielded a lifetime career changing the way we cook, Jamie has worked to showcase the best of British produce and dishes that are considered yet accessible. At the heart of the menu will be trusted suppliers including Flourish Produce, Westcombe Dairy, Cobble Lane Cured, London Honey Co and Hill Street Chocolate, to name a few.

Position

We are looking for a passionate, fun and experienced leader, ready to take on a role as Assistant General Manager and to translate the concept and ideals of our brand into a successfully operating restaurant.

Your responsibilities include:

  • Recruit hourly paid staff through structured interviews and trial shifts
  • Take ownership and ensure all staff are trained according to our “Grassroots” training programme, developed and encouraged according to their needs and potential
  • Support and implement objectives and development plans set by the General Manager for junior managers and team members in order to continue people development and increase staff retention
  • Oversee management trials and procedures when required, to company procedure

Delivery of sales and profit:

  • You will hold overall responsibility for staffing levels, keeping them in-line with business trends while maintaining the highest standards of service and quality
  • Maximise all sales opportunities within the business, delivering targeted sales and volume
  • Ensure budgeted profit is achieved through training, communication and control with regard to employment costs, managerial profit & other managerial costs, food and drink gross profit
  • Prepare accurate sales & employment forecasting and report figures within set timescales

Shift management:

  • Demonstrate the Jamie Oliver’s Catherine Street ideal by ensuring the restaurant set up, running and close down consistently meets the required high standards
  • Ensure inspirational pre-shift team meetings are carried out on every shift and that staff are motivated and clear on shift requirements/responsibilities as a result
  • Lead by example, ensuring that all managers are proactive, organised and aware of the performance and needs of all departments on shift
  • Ensure quality is monitored and consistently delivered through observation, attention to detail and interaction with both staff and customers
  • Be customer focused, ensuring a management presence at all times, plus anticipate customers’ needs to ensure their expectations are exceeded
  • Proactively develop relationships with guests and ensure that the positive attitude at Jamie Oliver’s Catherine Street extends to the behaviour of staff towards customers at all times
  • Identify and resolve any issues proactively on shift, both staff and customer related, ensuring that any customer complaint is handled in a manner which fits the brand standards

Communication:

  • Have a full understanding of all benchmark standards and communicate these at every opportunity; at daily pre-shift meetings, weekly management meetings and staff meetings
  • Promote an inclusive and sociable environment using staff boards, newsletters, team outings and information sharing to develop this
  • Have continuous and open communication with your management team

Health and hygiene:

  • Ensure kitchen hygiene meets Jamie’s Italian standards and the requirements of the Food Hygiene Bureau in liaison with the Head Chef and all managers are sufficiently trained and aware of the above
  • Ensure that weekly hygiene checks are completed and action to ensure any areas of non compliance are addressed

Legal requirements:

  • Work with the management team to ensure that the restaurant is safe and operating within the legal and company requirements of such laws as Fire & Health and safety and Environmental health
  • Work your teams to ensure that our social impact goals are baked into activities and take responsibility for helping to educate and inform your team, staff, partners and audiences as appropriate

Requirements

  • Strong experience of managing/running a busy, high turnover restaurant.
  • 5+ years of management or leadership experience with demonstrable skills and success in hiring, leading and developing others
  • Some experience in cost controls (labour, GP, expenditure, etc.) and understand operating P&L
