Director of Food And Beverage

Overview of Role
The Director of Food & Beverage is responsible for the management and leadership of the F&B department. Your purpose is to ensure the exceptional delivery throughout all Food & Beverage outlets within the hotel with attention highly focused on the NoMad Restaurant. You will be responsible for managing, training and developing managers and team members and work within all budgeted guidelines. You will be highly service oriented, leading by example during peak service times providing engaged and thoughtful hospitality to our guests.

Represent The NoMad positively to all internal and external stake holders as well as act as an ambassador of our brand when out in our industry’s community
Adhere to company policies and procedures at all times, including but not exclusive of; H&S policies, HR policies
Manage own workload efficiently and find balance between responsibilities on the floor during service and office administrative work
Communicate well within the team and other departments across the hotel and collaborate on shared initiatives as they related to standards of guest interaction

Main Duties & Responsibilities
The main responsibilities of the Director of Food & Beverage are summarised below, the list is not exhaustive:

Continually focus on the progression and regeneration of all Food & Beverage offerings across all outlets by keeping up on industry trends and practices; updating knowledge and skills to improve the product and service offering.
Core working days are Tuesday-Saturday with particular focus on evening services during peak times on Fridays and Saturdays.
Leads a team of engaged managers to train and develop all Food & Beverage team members; coaching and mentoring where necessary to establish growth and development opportunities.
Ensures the Food & Beverage activities are aligned with the respective Corporate Strategy, executing successful evolution of the business offering.
Ensures that each cost centre operates within pre-established financial budgets
Prepares business forecasts and prepares annual budgets for the division in collaboration with the General Manager and Director of Finance.
Preparing and sharing proposals in collaboration with the General Manager for any areas identified in changes, incl. cost effectiveness; divisional enhancements; recruitment and restructuring.
To own the F&B P&L; collaborating with Senior Leaders across the business to ensure the sufficient management of P&L; costings and expenses are accounted for and managed appropriately.
Assure the financial goals of the division are being met. Monitoring and control of labour costs, and other divisional expenses such as supplies and equipment.
To be ultimately accountable for delivering projects that involve all Food & Beverage outlets and offerings.
Driving a high performance culture, setting clear expectations, empowering your team and holding them accountable for delivering on the five star luxury service.
Champion ethical practices, ensuring complete compliance with all Standard Operating Procedure’s; Health & Safety Policies etc.
