Job Description - Food and Beverage Manager

What’s the gig?
You’ll take the reins of our entire F&B product lifecycle – think menu creation, pricing strategy, supplier partnerships, tactical promos, and making sure everything looks great at the point of sale. You’ll be at the heart of F&B across our hotels, helping us deliver delicious, efficient, and on-brand experiences that guests love and that drive commercial success.


Here’s a flavour of what you’ll be doing:



Product & Commercial Strategy



  • Own the F&B range from top to bottom – including pricing, promotions, and seasonal specials.

  • Use data to make smart decisions – analysing sales, margins, and trends to refine our product strategy.

  • Lead the pricing strategy across all our hotels, keeping a sharp eye on guest value and margin goals.

  • Take the spotlight at monthly Trading Reviews, presenting F&B performance and owning your targets.



Procurement & Supplier Magic



  • Work closely with our Procurement team to get the best value, quality, and service from our suppliers.

  • Support product trials, price reviews and supplier switches that drive better outcomes for guests and the business.

  • Keep stock in check – making sure we’ve got the right range, in the right places, at the right time.



Systems, Standards & Compliance



  • Lead the charge on POS updates and F&B configuration so hotels are always ready to serve.

  • Own our F&B SOPs, partnering with the Ops Effectiveness team to ensure standards are clear and easy to follow.

  • Keep us compliant, audited and aligned with legislation and brand standards.



Working With Our People



  • Collaborate across Hotel Leadership, Marketing, Commercial and Finance teams to bring our F&B vision to life.

  • Work hand-in-hand with Marketing on menus and promo materials that guests actually want to read.

  • Get involved in refurb and development projects to make sure F&B plays a starring role.



Guest Experience First



  • Keep the guest at the heart of everything – from breakfast buffets to bar snacks.

  • Use feedback and service data to tweak the offer and raise the bar.

  • Balance simplicity for teams with standout moments for guests.
