Job Description - Food & Beverage Manager

Role Purpose
A talented and ambitious manager, with experience of running multiple outlets including food, beverage, and hospitality functions.
Reporting directly to the Chief Operating Officer, with responsibility to develop and translate strategy to create innovative annual business plans and budgets for the Food and Beverage Department, ensuring their successful implementation by working closely with the team to achieve business priorities.
Role Duties
Manage all F&B activities across the site:
1.

Overall responsibility for F&B strategy and budget
a.

Cost control - management of all F&B associated costs including labour costs against set labour budget
b.

Oversee effective pricing of products to deliver annual budget
c.

Stock control across outlets including monthly stock count
d.

Drive efficiencies across all F&B outlets
e.

Regular meetings with the COO to discuss / develop strategy
f.

Regular meetings with Senior Supervisor, Supervisors, Head Chef and the wider team to discuss business progress against strategy keeping the team well informed
2.

Responsibility for Business Administration and Analysis of the F&B Department
a.

Prepare weekly and monthly reports for the COO including sales results, productivity, labour costs and wastage
b.

Prepare weekly sales and invoicing reports for the Finance Department
c.

Create project cost analysis spreadsheet for all customer enquiries to be reviewed by the COO for final approval
d.

Analyse the operation and look for areas to improve service, sales and profitability with the ability to implement ideas and achieve results
3.

Responsibility for supplier relations
a.

Supplier relationship management including strategic contract price negotiation
b.

Co-ordinating the purchasing of stocks from approved suppliers, achieving maximum stock rotations
c.

Supplier quality assurance (SQA)
4.

Overall responsibility for management of the F&B Team
a.

Effective people management and positive working relationships with volunteers, staff and senior management
b.

All aspects of people management (entry to exit)
c.

Ensure all new staff are inducted appropriately in to the business
d.

Manage and develop all staff including senior staff through annual PDAs and reviews against set schedule
e.

Development of the F&B Department skills matrix and appropriate training programme with responsibility for its implementation
f.

Implement and embrace F&B and other relevant organisational policies and procedures across all outlets
g.

Setting and management of departmental KPIs (daily, weekly, and monthly)
h.

Effectively manage, oversee employee rotas, performance, welfare, attendance, and timekeeping against the working time directive ensuring that all operations are fully staffed at all times
i.

Lead by example in creating a positive team environment
5.

Overall responsibility for all current Health & Safety / Food Hygiene Legislation across all kitchens and F&B outlets
a.

Ensure compliance with the HACCP procedure according to the companies food safety management document
b.

Ensure all F&B staff are maintaining a clean working environment at all times carrying out spot checks
c.

Oversee safety control measures and hygiene systems are always maintained at all times across all kitchens and outlets
d.

Random spot checks of equipment ensuring it is safe and operational in all kitchens and outlets
6.

Customer Experience
a.

Deliver a high-quality customer experience both in terms of improving the existing offer and adding to it with a resulting budgeted surplus to the Trust
b.

Ensure a responsive and innovative customer focused business with effective day to day operation of outlets and services
c.

Utilise communication feedback from customers, staff, and other departments to ensure continuous development and improvement
d.

Deal with any customer complaints in a professional and efficient manner, ensuring lessons learned are implemented
7.

Other Duties
a.

Cover the role of Duty Manager in line with other members of staff
b.

To undertake any other relevant duties as required
