Job Description - Food & Beverage Operations Manager

The Grand Hotel is one of Torquays finest 4 star hotels situated opposite Torre Abbey Sands with a spectacular view over the bay! The hotel consists of over 120 bedrooms forming different individual styles and views, The 1881 Restaurant, The Brasserie & Lounge, Leisure & Spa Facilities with indoor and outdoor swimming pools along with perfect events spaces which accommodates meetings, weddings and events. The hotel is part of The Richardson Hotel Group which is a established hotel group operating additional hotels in Torquay, Falmouth & Exmouth.
Following business expansion, we are now looking to recruit hospitality individuals to be part of our ongoing journey in continuing the development of our hotel business. We are now recruiting following expansion of our structure a Food & Beverage Operations Manager. The Food & Beverage Operations Manager is a hugely important role at the heart of the hotel and encompasses the management and running of the food and beverage operations and ensuring that a consistently high standard of service is delivered to delight our guests.
This key individual is responsible for the daily operation of the restaurants and bars, the direct F&B team, and for ensuring that customers have a positive experience, as well as managing the business to ensure that it is profitable. In addition responsibilities include managing beverage costs, upholding menu standards and controlling stock.
Duties and responsibilities include;
To ensure all Food and Beverage budgeted targets are met.
To be a positive role model for your team, inspiring and coaching those around you to deliver the highest standards of service.
Health & Safety - compliant with all health & safety audit requirements, cleanliness and providing a safe environment for team and guests.
To maximise average spends by implementing appropriate training and communication systems in the department.
To understand the construction of a budget and how to influence profit and loss results.
To work closely with the Food and Beverage manager to monitor stock movement, to ensure stock security and to adjust prices where necessary to ensure correct margins are met.
To follow the correct stock ordering procedures.
To provide training and development for employees in Food and Beverage procedures.
To develop a close working relationship with all departments, colleagues and managers to ensure guest expectations are met.
To develop strong working relationships with all customers in order to maximise sales opportunities and generate business for the future.
To effectively manage rotas to meet defined employment cost ratios.
To work closely with the General Manager & Head Chef on development of the food and beverage operational areas.
Undertake duty management shift as and when required to the business needs.
Oversee the operation of the hotels bars, restaurants, brasserie and event spaces.
To ensure all food & beverage employees are fully trained to the hotels standards operating procedures and that new employees have a minimum two weeks of training.
To ensure that rotas are done in advance of the following working week and that these are compiled as per the business forecast to ensure cost control.
The ideal candidate will be an experienced Food & Beverage Manager with a proven track record of delivering a high level of service in a quality, fast-paced hotel/restaurant environment. Clear and concise communication skills, experience of managing costs, the ability to recruit and motivate a team and create a strong teamwork ethic are vital attributes for this position.
