Today, Doner Shack is expanding rapidly, and we're building a leadership team to match that momentum. Following the successful opening of Doner Shack West End in April, we're now bringing the brand to the heart of Glasgow city centre.

We're looking for an exceptional General Manager to lead our newest location and play a key role in the next chapter of our growth.

THE OPPORTUNITY

As General Manager, you’ll take full responsibility for one of our newest stores. You’ll lead from the front, set the standard, and build a culture that delivers results, develops people, and creates experiences that customers come back for again, and again.

WHAT WE’RE LOOKING FOR

We’re looking for a leader who takes pride in running a tight operation.

Someone who:

* Leads with confidence, clarity, and consistency

* Cares deeply about their crew and holds them to high standards

* Is commercially sharp and comfortable owning the numbers

* Can move seamlessly between service, strategy, and planning

* Never settles for “good enough”

* Shares a genuine passion for food, hospitality, and fast-paced environments

* You should be as comfortable supporting the kitchen during a busy service as you are reviewing performance.

WHAT YOU’LL BE DOING

As General Manager, you will:

* Take full ownership of day-to-day restaurant operations

* Lead by example on the line, setting the benchmark for brand standards and values

* Recruit, train, coach, and develop a high-performing crew

* Drive sales, productivity, and profitability

* Manage stock, labour, and financial performance with precision

* Ensure full compliance with all legal, food safety, and health & safety requirements

* Support your crew across every area of the business

* Act as a Doner Shack ambassador within the local community

* Work closely with the franchise owner to drive business performance while building strong relationships with the franchisor and wider support team.
