AKI is a contemporary and stylish Japanese restaurant and lounge bar, originating in the vibrant capital of Malta, Valletta. Known for its modern take on authentic Japanese cuisine, AKI offers a unique dining experience with a refined menu featuring sushi, robata grill dishes, and signature cocktails, all within an elegant and sophisticated ambiance. Building on its success and reputation in Malta, AKI is now expanding its reach and is set to open a new location in London, bringing its distinctive Japanese culinary experience to a new international audience. This marks an exciting step for AKI as it ventures outside of Malta for the first time.

Following the successful establishment of AKI in Valletta, Malta, and with our exciting upcoming launch in London, we are now looking for a talented and innovative Head Of Wine to join our team.

Key Responsibilities

• Oversee the daily management of the wine program, ensuring exceptional service and high-quality wine offerings


• Provide expert advice and recommendations to guests on wine and sake selections, enhancing their dining experience


• Develop and maintain a diverse and high-quality wine list, including sourcing and selecting new wines and managing existing inventory


• Monitor and manage wine inventory levels, including ordering, restocking, and maintaining accurate records of stock levels and usage


• Ensure that all wine is stored and served according to industry best practices and health and safety regulations


• Prepare and manage the wine program budget, ensuring cost control and profitability


• Conduct daily training sessions for the team on wine knowledge, service techniques, and pairing recommendations


• Plan and execute wine-related events and promotions, coordinating with other departments to ensure successful execution


• Manage private wine events and functions, coordinating all aspects to meet guest expectations


• Stay updated with industry trends and developments, incorporating new techniques and offerings to enhance the wine program


• Continuously evaluate and improve the wine program and service standards

Job Requirements

• Proven experience in wine program management or sommelier roles


• Extensive knowledge of wine regions, grape varieties, and wine production techniques


• Strong leadership and team management skills


• Excellent communication and customer service abilities


• Budget management experience


• Ability to train and inspire front-of-house staff on wine service


• Familiarity with health and safety regulations regarding wine storage and service


• Passion for wine and dedication to delivering outstanding guest experiences
