Mei Ume at Four Seasons Hotel London at Tower Bridge is seeking a Commis Chef to join our talented culinary team.
About Mei Ume:
Mei Ume offers traditional Chinese and Japanese dishes presented with a modern and refined approach. Bringing two iconic Asian cuisines together in one destination, the menu features an elegant selection of sushi, sashimi and dim sum, alongside signature Chinese dishes. Head Chef Tong Truong and his team continually develop and elevate the dining experience through innovation, precision and creativity.

What you will do:
Prepare mise en place to an exceptional standard for each service
Support the culinary team with the preparation and delivery of all menu items
Maintain product quality and consistency in line with Four Seasons expectations
Keep work areas clean, organised and compliant with all health and safety guidelines
Assist senior chefs in daily kitchen operations and learn new techniques
Contribute to a positive, collaborative and professional kitchen environment
What you bring:
A genuine passion for Asian cuisine and a desire to learn from an experienced team
Basic culinary knowledge with an eagerness to develop your skills
A positive attitude and the ability to work well under pressure
Strong attention to detail and pride in producing high quality food
A commitment to maintaining excellent food safety and hygiene standards
Previous experience in a quality restaurant or hotel environment is an advantage, although not essential for the right person
