Job Description:
As the Production Kitchen Manager at Alley Cats Pizzeria, you will be responsible for overseeing the daily operations of our production kitchen. You will manage a small team of prep chefs, ensure efficient and effective production processes, and personally handle the delivery of produce to our restaurants before opening times.
VALID UK DRIVERS LICENSE IS A MUST.
Key Responsibilities:
Team Management: Supervise kitchen staff, allocate labour resources, coordinate schedules, and ensure a positive team spirit through support and communication.
Production Oversight: Track production schedules, manage costs, and maintain records of daily operations to ensure efficiency and quality.
Quality Control: Perform quality control on food leaving the kitchen and ensure compliance with health and safety regulations, including HACCP and COSSHH.
Inventory Management: Order kitchen inventory, materials, and other supplies, conduct weekly inventory audits, and maintain food par levels while minimizing wastage.
Delivery Duties: Drive a delivery van to drop off produce to restaurants before opening times.
Hiring & Training: Hire, train, and schedule cooks to ensure a well-prepared and efficient kitchen team.
Safety & Cleanliness: Ensure the kitchen is kept clean and safe, adhering to all cleaning schedules, HACCP, and COSSHH policies.
Coordination with Operations: Work closely with the Operations team regarding menu item changes, prices, and overall coordination.
Commitment to Standards: Ensure the kitchen opens, operates, and closes to the required company standards, demonstrating full commitment to food, menu knowledge, and portion control.
Administrative Duties: Attend management and department meetings and briefings as required.
Requirements:
Minimum 3 years of work experience in a similar role.
Highly organized with the ability to work in a high-stress environment and manage kitchen staff effectively.
Superior knowledge of relevant HACCP and COSSHH regulations.
Valid Driver License B is essential.
Strong commitment to maintaining high standards of food quality, safety, and cleanliness.
