Job Description - Senior Sous Chef

What We Are Looking For:
The Prince Arthur E8 is currently seeking a dedicated and enthusiastic full-time Senior Sous Chef to join our team. Nestled in the heart of Hackney, The Prince Arthur holds the prestigious title of the Number 1 Gastropub in London, as awarded by Timeout.
We pride ourselves on our collaborations, with local British suppliers from Fin & Flounder on Broadway Market, to Martin Denny our forager, our meat from Lake District Farmers, and carefully sourced fruit and vegetables from across the UK from Shrub and European Fruit and Veg from Natoora.
Our menus are written with an emphasis on the season and our close relationship with our suppliers, based around European flavours, particularly French, Italian and Spanish. The menu celebrates a nose-to-tail approach to dining, with whole carcasses arriving from local farmers and being completely utilised.

Role:
The Sous chef will help maintain food standards and profitable trade alongside the
Head Chef.

Work as part of the management team alongside the Head Chef, General Manager
and Assistant General Manager.

Will help implement routes and systems ensuring processes and staff work in
optimal ways.

Address any issues that arise together with the management team.

Reporting:
The sous chef reports directly to the Head chef and the General Manager

Team/staff:
Ensure a positive and fulfilling working environment for everyone.

Recruit, train and develop the kitchen team including managing trials.

Ensure that high standards are maintained by other members of the kitchen team.

Provide guidance and training to members of the kitchen team.

Help and encourage staff to learn about food and wine.

Making sure that staff members feel able to come to you with any issues or questions that they have.

Food
Developing the food and menu at The Prince Arthur and ensuring that it stays seasonal and delicious.

Ensuring that the kitchen sticks to the required GP targets.

Fostering and maintaining positive relationships with suppliers.

Educating staff (both kitchen and floor) about the menu through daily menu briefings.

Food Safety Management System / Housekeeping
Ensure that staff are complying with the food safety management system in place.

Work with the management team to address any food safety issues that arise.

Supervise and oversee daily and weekly cleaning of the kitchen.

Awareness of maintenance issues that arise in the kitchen and the pub more generally.

Monitor and order the necessary cleaning products to ensure that the kitchen can be kept clean.

Ensure the upkeep of kitchen equipment

Financial
Work together with the Head Chef and Junior Sous Chef to ensure that food cost targets are met.

Manage the monthly stocktaking.

Events and deliveries
Liaise with the management team to stay up to date with upcoming events and delivery requirements.

Word with Head Chef to create excellent menus for the above and develop the business
