Position Summary

The Assistant Bakery Manager supports the Bakery Manager in leading all aspects of Bakery Department operations, including customer service, production, merchandising, inventory management, food safety compliance, associate development, and financial performance. This position helps ensure the department consistently delivers high-quality bakery products, maintains exceptional presentation standards, and achieves sales and profitability goals. The Assistant Bakery Manager assumes responsibility for department operations in the absence of the Bakery Manager.

Key Responsibilities Customer Service & Sales

  • Deliver exceptional customer service and promote a customer-first culture.

  • Assist customers with bakery purchases, custom cake orders, specialty requests, and product recommendations.

  • Resolve customer concerns promptly and professionally.

  • Support department sales growth through effective merchandising, promotional programs, sampling events, and seasonal offerings.

  • Ensure bakery displays remain attractive, fully stocked, and sales-driven.

Department Operations

  • Assist with daily bakery operations including production, decorating, packaging, merchandising, ordering, and inventory management.

  • Ensure products are prepared, displayed, and maintained according to company quality standards.

  • Monitor product freshness, quality, rotation, and code date compliance.

  • Maintain accurate pricing, labeling, signage, and promotional execution.

  • Support production planning to meet customer demand while minimizing shrink and product waste.

  • Ensure department cleanliness, organization, and operational readiness at all times.

Leadership & Team Development

  • Assist in training, coaching, and developing Bakery Department associates.

  • Provide leadership and direction during assigned shifts.

  • Promote teamwork, accountability, and professional growth.

  • Support scheduling and labor management initiatives.

  • Assist with onboarding and training associates on bakery procedures, customer service standards, and food safety practices.

  • Foster a positive and inclusive work environment.

Merchandising & Product Quality

  • Maintain bakery displays, service cases, and tables to company merchandising standards.

  • Execute seasonal, holiday, and promotional merchandising programs.

  • Monitor product presentation and ensure quality expectations are consistently met.

  • Ensure cakes, breads, pastries, donuts, and specialty products are fresh, properly displayed, and customer-ready.

  • Identify opportunities to improve product assortment and sales performance.

Financial Management

  • Support department sales, labor, gross profit, and shrink objectives.

  • Assist with inventory control and expense management.

  • Help reduce waste through proper forecasting, ordering, production planning, and rotation practices.

  • Review department performance and identify opportunities for operational improvement.

  • Assist with physical inventory counts and inventory accuracy initiatives.

Food Safety & Compliance

  • Ensure compliance with all food safety, sanitation, health, and regulatory requirements.

  • Monitor proper food handling, storage, labeling, and temperature control procedures.

  • Maintain clean and sanitary production, storage, and sales areas.

  • Ensure associates follow all food safety and sanitation standards.

  • Support compliance with company policies, procedures, and operational guidelines.

Safety & Asset Protection

  • Promote a safe working environment for associates and customers.

  • Ensure bakery equipment is operated and maintained safely.

  • Follow company accident prevention and incident reporting procedures.

  • Support shrink reduction and asset protection initiatives.

  • Maintain safe, organized, and efficient work areas.

Leadership Coverage

  • Assume responsibility for department operations in the absence of the Bakery Manager.

  • Assist with staffing decisions, production priorities, and workflow management.

  • Communicate department goals, expectations, and performance standards to associates.

  • Partner with store leadership to achieve departmental and store-wide objectives.

  • Serve as a role model for customer service, productivity, food safety, and operational excellence.

Minimum Qualifications

  • High school diploma or equivalent.

  • Previous bakery, food service, grocery, or retail experience required.

  • Previous supervisory or leadership experience preferred.

  • Knowledge of bakery production, merchandising, and food safety practices.

  • Strong customer service, communication, and organizational skills.

  • Ability to work flexible schedules, including mornings, evenings, weekends, and holidays.

Physical Requirements

  • Ability to stand and walk for extended periods.

  • Ability to bend, stoop, kneel, reach, and perform repetitive motions throughout the workday.

  • Ability to lift and carry up to 50 pounds regularly and heavier loads with assistance when necessary.

  • Ability to work around ovens, mixers, refrigeration equipment, and other bakery machinery.

  • Ability to safely operate bakery equipment and tools.
