Job Description - Assistant Food and Beverage Manager

Description

This is a great opportunity to start or continue your career in private club management!

Responsible for all front of the house food and beverage service for the club. Main priority is scheduling, menu development/design, managing restaurants, assisting with events and being the closing manager for the club.

Responsible for all aspects of the Club in the absence of the Food and Beverage Manager, performs specific tasks as requested by him/her.

Requirements

Duties/Responsibilities:

• Responsible for high standards of conduct, appearance, graciousness, and service of personnel and the cleanliness of clubhouse and all food and beverage outlets.

• Assists in developing an operating budget for each of the related department’s; after approval monitors and takes corrective action as necessary to assure that the budget’s sales and cost goals are attained.

• Assists F&B Manager with effective orientation and training for new staff and professional development activities for experienced staff are implemented. Develops ongoing training programs for foodservice, and bar production/service personnel.

• Conducts such functions as interviewing, hiring, performance appraisals, coaching, and dismissal, if necessary, to insure appropriate staffing and a high level of productivity is maintained for all areas of responsibilities.

• Inspects to ensure that all safety, sanitation, energy management, preventive maintenance, and other standards are consistently met.

• Assures that all standard operating procedures for sales and cost control are in place and consistently utilized.

• Establishes and maintains effective employee relations throughout St. Charles Country Club.

• Helps plan and approve the organizational chart, staffing and scheduling procedures, and job description/specifications for all department staff.

• Assists in the planning and execution of all club events.

• Schedules periodic housekeeping, locker rooms, and food/ beverage service employee meetings to ensure correct interpretation of club policies and service standards.

• Ensures that all legal requirements are consistently adhered to, including wage and hour and federal, state and/or local laws pertaining to alcoholic beverages.

• Researches new beverage products and develops an analysis of the cost/profit benefits.

• Implements policies and procedures for the food/ beverage departments.

• Monitors the ordering and receiving program for clubhouse supplies, cleaning supplies, beverage products, and supplies to ensure proper quantity and price on all purchases.

• Greets guests and oversees actual service on a routine, regular basis.

• Monitors each department of responsibility to insure that supervision and visible management are providing prompt, cordial attention and personnel recognition to every member and their guest.

• Assist in development of wine lists and bottle/glass wine sales promotion programs.

• Creates by-monthly wine/drink promotions.

• Continually works to ensure correct handling procedures to minimize China and glassware breakage and food waste.

• Personally handles selected member and guest complaints and advises the Food and Beverage Manager.

• Develops interesting ways of promoting club functions in the dining room and lounges. 

• Runs Pre-Shift meetings covering topics like training, specials, club happenings etc.

• Performs related duties and specific projects as assigned by the General Manager.

Qualifications/Requirements:

The following shall serve as a model profile of skills and abilities necessary to fulfill the responsibilities and demands of the position.

Presence, Personality and People Skills: Must have a professional conservative presence, business dress attire required, upbeat extrovert type personality, ability to remember names and faces, diplomatic, cordial, warm and empathetic. Must be able to “roll up their sleeves” to help the team and know when to delegate responsibilities.  Always maintains a member’s first posture, going out of their way to accommodate our members and guests all with a sense of urgency.  A passion for providing superior member service and an ability to translate that passion to the staff.

Experience and Background: Should possess some experience in Food and Beverage management. Private club experience a plus.

Wine Knowledge:  An extensive understanding of wines is a very big plus.  Or a willingness to learn those skills

Human Resource and Financial Management: Must possess such skills to manage payroll costs, supplies, and beverage costs to agreed upon levels. Forecasting sales and scheduling staff to match is critical to financial success.  The ability to train, develop and reward staff is probably the #1 ability required in this position. Competent in reading, understanding and utilizing financial statement information and be able to make corrective action where necessary.

Innovation and Creativity: Individual must possess the interest, desire and ability to introduce state of the art methods, management, food, beverage and service ideas to continually challenge the staff and impress the membership. Willingness to accept the status quo is unacceptable.

Continuing Education, Professional Development: Must desire to continue to learn, taking advantage of seminars, meetings and programs of interest, balanced by the necessary workload. Active in the association, aspiring and working toward Club Management certification a real plus.

Technical Skills: Knowledgeable professional table service, bar operations, banquets and catering operations, proficiency in P.O.S. Systems critical, Microsoft Office environment. Menu design is a must. Must be able to lift up to 50 lbs. and stand and walk for long periods of time (10 to 14 hours)
