Job Description - Assistant Food & Beverage Manager

Job Summary

The Assistant Food & Beverage Manager is responsible for assisting the Food & Beverage Manager in ensuring first quality Food and Beverage service while maintaining adherence to budgeted payroll and overhead costs. He/she is also responsible for continually working toward improving Food and Beverage sales revenues beyond budget.
Essential Job Functions

The Hotel operates 24 hours a day and 7 days a week, so operational demands require variations in shift days, starting times, and hours worked in a week.

Handles employee questions and concerns.

Monitors employees to ensure performance expectations are met.

Provides feedback to employees based on observation of service behaviors.

Assists in supervising daily shift operations.

Supervises restaurant and all related areas in the absence of the Food & Beverage Manager.

Participates in department meetings by communicating a clear and consistent message regarding the departmental goals to produce desired results.

Ensures all employees have proper supplies, equipment and uniforms.

Communicates to Chef and Food & Beverage Manager of any issues regarding food quality and service levels.

Assists in ensuring compliance with all restaurant policies, standards and procedures.

Monitors alcohol beverage service in compliance with local laws.

Assists in achieving or exceeding budgeted goals.

Performs all duties of restaurant employees and related departments as necessary.

Opens and closes restaurant shifts.

Interacts with guests to obtain feedback on product quality and service levels.

Supervises staffing levels to ensure that guest service, operational needs and financial objectives are met.

Encourages employees to provide excellent customer service within guidelines.

Handles guest problems and complaints, seeking assistance from supervisor as necessary.

Strives to improve service performance.

Sets a positive example for guest relations.

Assists in the review of comment cards and guest satisfaction results with employees.

Meets and greets guests.

Supervises on-going training initiatives.

Uses all available on the job training tools for employees.

Communicates performance expectations in accordance with job descriptions for each position.

Knowledge, Skills & Abilities
Thorough knowledge of Food outlet operations including food and beverage, supervisory aspects, service techniques, and guest interaction.

Knowledge of all State, Federal and Corporate liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests.

Hold a current Food Handler Card or in the process of being certified

Ability to work under pressure and deal with stressful situations during busy periods.

Knowledge of the appropriate table settings and service ware.

Basic knowledge of the English language sufficient to understand inquiries from customers and communicate simple instructions.

Ability to comprehend and apply written product labeling instructions to enable the safe application of products and processes within the hotel.

Ability to remember, recite and promote the variety of menu items.

Ability to operate beverage equipment, e.g., coffee maker.

Minimum of 2 years as a Food & Beverage Supervisor and Hotel experience. Must have previous experience in a property of similar size and nature; must have Food & Beverage product and equipment knowledge. Physical Demands

Ability to transport up to 30 lbs. through a crowded room on a continuous basis throughout the shift.

Lifting Thirty (30) pounds maximum.

Constant standing & walking required

Frequent twisting, bending, stooping, reaching, standing, walking, talking, hearing, seeing, and smiling.
