Job Description - Cascade Dining Room Manager

Description

 A pioneering spirit of craftsmanship paired with a deep-rooted connection to the region inspires our culinary program, which is showcased fully in our Cascade Dining Room. From cold mountain streams and deep Pacific waters teeming with fish to rolling fields of fresh organic produce, Timberline Lodge is at the center of the various bounties we enjoy in the state of Oregon. Our dining programs strive to create a sustainable farm-to-table relationship with the land around Mt. Hood. 

Responsible for daily, administrative and operational aspects of managing the flagship restaurant at Timberline Lodge, the Cascade Dining Room. Supervise and maintain professional level of employees.   Maintain a sanitary environment as described by the Health Department. Ensure staff are properly trained on a continuous basis and provide outstanding guest service. 

Requirements

ESSENTIAL FUNCTIONS:

  • Lead CDR staff meetings on a regular basis.
  • Create weekly schedules based on estimated business levels.
  • Complete weekly labor forecasts and adhere to labor budget.
  • Daily tips recordkeeping.
  • Maintain communication with F&B Director and Executive Chef regarding guest issues and day-to-day information.
  • Ensure CDR employees are meeting or exceeding all set standards.
  • Update CDR Training Manual as needed.
  • Ensure all CDR employees have valid Oregon Food Handler’s and OLCC permits and are following proper food handling guidelines.
  • Supervise CDR staff.
  • Meet with Kitchen Supervisor before and after meals to discuss problems, upcoming events and any other necessary items.  
  • Meet with CDR staff on a regular basis to address any concerns. Take appropriate and prompt action when necessary.
  • Participate in thoroughly training new and current staff on an ongoing basis. Use established programs to constantly improve quality of guest service.
  • Complete supervisor check list at end of each shift.
  • Ensure a sanitary environment is maintained at all times.
  • Work with Assistant CDR Mgr. to estimate future needs and hire staff in a timely fashion.
  •  Interview, hire and orient new staff in CDR. Ensure all hiring paperwork is accurate and training is prompt.
  • Develop weekly CDR and F&B coordinating notes.
  • Monitor Paylocity punches on a daily basis. 
  • Enter schedules on a timely basis.
  • Develop and maintain china, silver and equipment pars. Perform quarterly inventories.
  • Maintain a flow of appropriate musical selections through CDR systems.  
  • Investigate cash balancing shortages and overages.
  • Ensure proper linen pars remain in the dining room.
  • Handle special events in CDR including flowers, logistics, and menus.
  • Exercising sound judgment and awareness regarding language, behavior, and dress and grooming. 
  • Actively participate in RLK and Company’s Health & Safety Program by identifying and reporting potential hazards, reporting incidents, and promoting a healthy workplace
  • Exercise stewardship of all RLK and Company facilities and environments, ensuring that efforts are made to reduce, reuse, and recycle when the opportunity is present.
  • Present a professional, quality image at all times.  
  • Regular and reliable attendance.

QUALIFICATIONS:   

  • Must have experience managing a fine dining restaurant.
  • Must have service-oriented personality.
  • Must be detail-oriented with the ability to set and meet high customer service standards.
  • Must use proper etiquette while conversing with guests.
  • Must know and follow all proper service procedures.
  • Must have excellent knowledge of but not limited to Microsoft Word, Outlook, Excel, Micros.
  • Must be able to multi-task under pressure.
  • Must have detailed knowledge of all menu and buffet offerings.
  • Must be proficient in up-selling products and services.
  • Must know and follow all proper reservation procedures. 
  • Must have valid OLCC and Oregon Food Handlers permit. 

PHYSICAL REQUIREMENTS: 

  • Must be able to lift 40 lbs.
  • Must be flexible and capable of bending, twisting and kneeling.
  • Must be able to work in tight space with balance and poise.
  • Must be able to work on feet, stand and walk for up to 8 hours at a time.
  • Must be able to keep up with the pace of department/position demands.
