Job Description - Certified Dietary Manager

Description

Harbor’s Edge is a premier 5-star, resort-style Continuing Care Retirement Community (CCRC) located alongside the beautiful harbor in Norfolk, Virginia. Our community consists of 300 Independent Living Residential Units, a 33-bed (Medicare/private) Skilled Nursing Healthcare Unit, a 40-bed Assisted Living Unit, and 34-bed Memory Support Unit.

Additionally, our Continuing Care Retirement Community (CCRC) has been recognized as a “Best” senior living community.

We are seeking a highly qualified, full-time Certified Dietary Manager to lead our Dietary team in delivering excellent care for our residents. The ideal candidates will have senior living experience (e.g., long-term care, assisted living, memory support) with a passion for working with an elderly population. This position will manage the food service program and will meet food quality standards and safety guidelines following current applicable federal, state, and local standards, in alignment with our established policies and procedures to deliver quality dining services. 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Provide nutritional screening, monitoring, and implementation of the nutrition plan of care for the residents under the guidance of the Virginia Department of Health Dietitian and in coordination with Health Services.
  • Assess residents' need for proper nutrition and dietary requirements. Direct, help prepare, and serve regular meals and therapeutic diets, order food and supplies, ensuring standardized recipes and all food safety requirements are followed. Inspect trays for accuracy before they are delivered to the residents. Process new diet orders and changes as received from provider services and maintain accurate care plans/diet cards. 
  • Plan, help prepare and serve special meals and holiday functions. Inspect and maintain work area and equipment to ensure sanitary condition. 
  • Visit residents to complete initial nutritional assessment and screening. Quarterly visits to residents to explain diet, record food preferences, and promote a quality food service, with residents at nutritional risk visited weekly. All visitation documentation must be completed and submitted to Health Services for residents at nutritional risk.
  • Monitor daily food intake and audit diet orders monthly, compare to physicians' orders, reporting any discrepancies to Health Services. 
  • Oversee food purchases from approved vendors, production, and timely service of meals receive and inventory incoming food supplies. 
  • Ensure that proper storage is available and that handling of food and supplies complies with current guidelines. Maintain cost records and works to meet budget guidelines. 
  • Maintain records of income and expenditures, food, supplies, personnel, and equipment in report format to be submitted to management. 
  • Responsible for leading department including training staff and quality control to meet Harbor’s Edge’s standards. Provide work schedules, assignments, dietary resources, and monitors staff performance.    
  • Report equipment/cleaning product needs and or malfunctions to management timely. Ensure continued compliance with all federal, state, and local regulations are met regarding safety and quality.
  • Follow infection control and universal precautions policies and procedures to ensure that a sanitary environment is always achieved. Follow proper reporting, isolation, and handwashing procedures/techniques. 

Requirements

  • High school diploma or equivalent (GED).
  • Certified Dietary Manager (CDM) and/or Food Service Manager as required by federal, state, and local regulations.  
  • ServSafe™ certified, or ability to obtain within thirty (30) days of employment required. 
  • At least three (3) years of work-related experience with the elderly and dementia populations with at least two (2) years of management experience. 
  • Valid, current Virginia Driver’s License (and liability insurance) to use personal vehicle for occasional Administration business.
  • Excellent communication skills including written, verbal, and ability to follow instructions accurately and timely.
  • Ability to consistently perform duties with consideration for resident’s rights, demonstrating integrity and confidentiality in the care of the residents and in handling their health information and all personal/confidential information.
  • Demonstrate service excellence through daily interactions and be skilled at active listening.
  • Demonstrate excellent organizational, attention to detail, multi-tasking, and time management skills.
  • Work independently and exercise sound judgment.
  • Observe proper safety protocols and appropriate sanitary techniques.
  • Demonstrate proficiency with applicable computer programs and databases, including Microsoft Office Suite, EMR, and tray card system. 
  • Be able to exert a minimum of 50 lbs. of energy in order to assist elderly in and out of wheelchairs, beds, etc., as well as be able to sit, stand, walk, climb stairs, reach, turn, bend, stoop, crouch and kneel, balance, and maintain body equilibrium to prevent falls, reach over the head, push/pull, and grasp with both hands.
