Job Description - Chef de Cuisine

Description

Looking to expand your career as a Chef de Cuisine and have a passion for the daily operations of a restaurant's kitchen? Would you like to work alongside our celebrity chef/owner, Crista Luedtke? We invite you to apply for our Chef de Cuisine position that will oversee both Road Trip Kitchen and Boon Eat + Drink. The CDC will be supervising cooking and other kitchen personnel and will coordinate their assignments to ensure economical and timely food production. 

Requirements

  • Develops a culinary plan to ensure quality satisfaction with both long- and short-term goals
  • Enhances food quality by creating standards for other kitchen staff members
  • Monitors the prices set on a menu by overseeing and comparing it to the cost of inventory, food orders, and supplies
  • Assists with the creation of seasonal, monthly, or annual menus
  • Works with the Restaurant Chef/Owner to ensure food, beverage, and labor budgets are maintained and monitored
  • Supervises daily activities of the kitchen staff including Sous Chefs, Specialist Chefs, Cooks, and Assistants
  • Creates BOH schedules 
  • Ensures all kitchen equipment is running efficiently and arranging repairs or new parts when required
  • Looks over operating costs of running the kitchen to ensure food, equipment, and staffing budgets are not exceeded
  • Hires and fires employees
  • Estimates food consumption, and purchases or requisitions foodstuffs and kitchen supplies. Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu item
  • Ability to work weekends, holidays and nights
  • Food Manager certification required 
  • Assists with maintaining payroll and time records to ensure they are accurate and employees are following meal and rest break laws
