Chef de Partie

Our client, a prestigious five-star hotel located in Valletta, Malta, is seeking a passionate, dedicated, and creative Chef de Partie to join their established kitchen brigade. This is an excellent opportunity to work within a high-end hospitality environment committed to delivering exceptional dining experiences across its restaurants and food & beverage outlets.

Key Responsibilities

• Prepare and present high-quality dishes within your designated section, ensuring they meet the hotel's standards and menu specifications.
• Maintain consistency in taste, presentation, and portion control during all services.
• Oversee the daily operations of your section and ensure it is fully prepared for service.
• Assist with mise en place and ensure ingredients are properly prepared and organised.
• Monitor stock levels within your section and ensure proper storage, labelling, and rotation of ingredients.
• Maintain excellent hygiene and cleanliness in all kitchen areas in accordance with food safety regulations.
• Adhere strictly to food safety and HACCP standards.
• Support and guide Commis Chefs and junior kitchen staff when required.
• Work collaboratively with the wider kitchen and front-of-house teams to ensure smooth service.

Requirements

• Relevant culinary qualification or professional culinary training.
• Previous experience as a Chef de Partie or strong experience as a Demi Chef de Partie in a reputable hotel or restaurant environment.
• Solid knowledge of food safety, hygiene, and HACCP standards.
• Ability to work efficiently under pressure in a fast-paced kitchen environment.
• Strong attention to detail and a passion for culinary excellence.
• Team-oriented with good communication and organisational skills.
• Flexible with working hours, including evenings, weekends, and public holidays.
• Currently residing in Malta and eligible to work locally.
