Job Description - Club Sous Chef


 Club Sous Chef sought by West group Naples LLC dba LaPlaya Beach and Golf Resort, in Naples FL to perform the following duties.

· Manage all aspects of the Baleen Kitchen and ensure high-quality preparation of all menu items in accordance with standards.

· Oversee the Baleen Kitchen team members and direct food preparation of the Baleen Kitchen.

· Assign specific tasks and responsibilities to Baleen Kitchen team members and prepare staff roster.

· Maintain records of food and labor costs, sales, and outlet P&L.

· Meet with Executive Chef to review schedules, assignments, anticipated business levels and changes.

· Monitor the physical inventory of kitchen equipment, supplies and food items.

· Perform quality control by inspecting plates before guests receive them, ensuring the quality of the dish are up to standards.

· Order items as necessary and generate purchase orders.

· Research current food trends and techniques.

· Assess the skills of existing team members and determine gaps or opportunities to recruit the right team members.

· Responsible for training new team members to Baleen Kitchen standards.

· Ensure the kitchen adheres to all health and safety regulations.

· Manage guest complaints and work out solutions to ensure guests are satisfied with their dining experience.

· Adapt menu items to cater to specific dietary needs.


Requirements

  

Two years of experience in a high volume, fine dining resort restaurant.

  

6 months of experience must include: 

- Adhering to food safety standards when storing and preparing foods.

- Providing guidance to junior cooks regarding food preparation methods & techniques.

- Preparing meals according to recipes and menus, adjusting ingredients and cooking times accordingly

- Operating kitchen equipment in alignment with OSHA protocols and manufacturer instructions.

- Ensuring compliance with food safety standards, health & safety regulations, always maintain a sanitary work environment.

- Experience in utilizing restaurant POS/inventory control systems, Office 365.

- Experience with various cooking methods and procedures.

- Operating grills, fryers and broilers to cook items to quality guidelines.
