Job Description - Commissary Cook

Hog Island Oyster Company is looking for a FULL-TIME COMMISSARY COOK with a flexible schedule to work at our Petaluma location. SUMMARY OF POSITION

The Commissary Kitchen cook is responsible for all kitchen functions related to hot and cold food including executing daily prep, fish cutting and seafood processing, maintenance of quality standards, assisting with training of employees in methods of cooking, preparation, storage, portion, cost control, HACCP logging & labeling, sanitation and cleanliness. 

GENERAL DUTIES AND RESPONSIBILITIES

  • Ensure that all food and products are consistently prepared and served according to the commissary’s recipes, portioning, cooking and serving standards
  • Assist Commissary Manager in training new staff
  • Ensure that daily prep tasks are completed
  • Ensure that prep pars are adjusted according to the flow of business
  • Ensure that the wholesale sheet is updated with current inventory of commissary items
  • Assist in training kitchen personnel in safe operation of all kitchen equipment and utensils
  • Assist in training kitchen personnel in cleanliness and sanitation practices
  • Ensure cleanliness and organization of storage areas, warehouse, freezer, Traeger areas, walk-in, dish pit
  • Assist in purchasing and ordering of ingredients and supplies
  • Assist to ensure that the kitchen is stocked with necessary ingredients and supplies
  • Assist in ensuring sanitation and cleanliness of kitchen line, kitchen work stations, kitchen equipment are maintained
  • Assist in making sure kitchen is properly closed down and kitchen breakdown lists are followed
  • Check and maintain proper food holding and refrigeration temperature control points
  • Check proper upkeep of all equipment for both function and safety; communicate anything needing attention to the manager
  • Fill in where needed to ensure culinary standards are met and operations remain efficient
  • Keep busy during slow periods, have a list of cleaning projects and prep projects that need to be completed
  • Ensure that all chemical spray bottles are properly labeled and that products are being used according to manufacturer’s instructions
  • Ensure that dish room food pan and food storage area is kept tidy and organized
  • Make sure commissary items are clearly labeled and dated, and organized according to the HACCP plan
  • Update HACCP inventory logs and production logs every day
  • Update HACCP cleaning logs and checklists every day
  • Cut fish and process seafood
  • Other duties as assigned 

Requirements

 

SKILLS AND EXPERIENCE

  • 1-3 years’ experience working in a commercial kitchen
  • Ability to work under pressure and deal with stressful situations during busy periods
  • Ability to communicate clearly and respectfully with staff and management in English and Spanish
  • Must be consistently proactive, punctual, organized, efficient, solution oriented, and positive
  • Familiarity with Kitchen SOPs and safety practices
