Job Description - Commissary Lead

ABOUT THE ROLE


The Commissary Lead reports directly to the Commissary Manager and owns the execution side of commissary operations: production, consistency, food safety, and inventory accuracy. This role isn't about waiting for a fix to be handed down. You're expected to spot what's slowing production down, flag it, and bring ideas to make it better.


You'll be trusted to keep the commissary's engine running clean, on schedule, and to standard, and to make it run better than you found it.



WHAT YOU'LL OWN



  • Execute daily prep and production schedules for baked goods and sandwiches, and flag adjustments when demand shifts

  • Maintain food safety logs (temperature, cooling, sanitation) with precision

  • Keep the commissary clean, organized, and audit-ready at all times

  • Manage inventory counts, ordering support, and cost/labor tracking

  • Apply recipe production standards and actively contribute to recipe scaling and new product ideas, not just execute to spec

  • Identify inefficiencies in prep flow, waste, or process, and bring proposed fixes to the Commissary Manager

  • Set a visible pace and energy on shift that helps keep production moving

  • Maintain and report on kitchen equipment condition

  • Track production and waste records accurately

  • Relay operational handoffs (inventory counts, equipment issues) to the Commissary Manager as needed



WHAT YOU BRING



  • 2+ years of experience in a high-volume commercial kitchen

  • Strong grasp of food safety standards and commercial kitchen equipment

  • Confident knife handling and hands-on production skill

  • Working knowledge of inventory systems, recipe costing, and labor efficiency

  • A self-starter mindset, you push work forward instead of waiting for direction

  • Comfortable proposing changes to process, not just maintaining what exists

  • Positive, visible energy that helps set the pace of the shift

  • High attention to detail without losing flexibility when a better way presents itself

  • Ability to stay focused and effective under pressure

  • Computer literacy preferred (inventory systems, logs, production tools)

  • Able to lift up to 25 lbs and stand for extended periods

  • Reliable Monday–Friday availability (early morning to early afternoon)

  • $23.00/hour

SCHEDULE


Full-time, salaried. Monday–Friday. Weekends and nights only on rare occasions.
