We’re hiring a Commissary Sanitation Team Member in our DC Commissary!

The Commissary Sanitation Team Member supports commissary operations by ensuring all dishes, utensils, cookware, equipment, and food-contact surfaces are properly washed, sanitized, and returned to service. This role also maintains daily and deep-clean sanitation standards, trash removal, and supports deliveries and storage organization. By keeping the facility safe, clean, and compliant, this role ensures uninterrupted food production.

A day in the life of a Dishwasher Team Member: 

• Dish Station Setup & Warewashing
  • Set up dish station, dish machine, and 3-compartment sinks at the start of each shift.
  • Wash, rinse, sanitize, and air-dry cutlery, utensils, cookware, and trays to ensure kitchen staff has constant access.
  • Keep dish area organized, clutter-free, and maintain clean/dirty separation.
  • Return clean/dry equipment and utensils to their designated storage locations.
  • Change water in machines/sinks at least every 2 hours, or as needed, to maintain proper chemical dilution and cleanliness.
  • Complete daily chemical/supply inventory form and report reorders.
  • Verify sanitizer ppm with test strips and record results.
• Daily Cleaning & Sanitation
  • Maintain clean/dry floors & walls throughout shift; sweep and mop dish area daily.
  • Change sanitizer buckets at each station every 2 hours.
  • Walk production floor every 2 hours to sweep and spot clean around stations.
  • Clean restrooms three times daily (AM & PM) including toilet, sink, trash removal, and restocking.
  • Refill all handwashing stations with soap and paper towels.
  • Clean Office & Breakroom
  • Dispose of fryer oil 
• Deep Cleaning Tasks
  • Clean/organize freezers, fridges, loading dock and dry storage areas.
  • Drain, clean, and sanitize ice machine per cleaning schedule.
  • Support scheduled deep cleans of floors, drains, walls, hood vents and trash equipment.
  • Deep clean breakroom refrigerator/freezer once weekly
• Trash & Waste Removal
  • Empty trash cans and recycling throughout shift; break down cardboard and place in bins.
  • Clean trash cans (inside) (outside) with degreaser per schedule.
  • Maintain dock/trash staging areas clean, safe, and organized.
• Deliveries & Organization
  • Assist with unloading, storing, and rotating food deliveries using FIFO.
  • Maintain dry storage area organization and ensure shelves are clean, labeled, and orderly.
  • Support receiving manager in daily tasks.

Additional Requirements:

• Must be able to lift, carry, and place up to 50 pounds at a time.
• Must be able to bend, stoop, and wipe frequently.
• Must frequently immerse hands in water.
• Ability to work in both hot (kitchen/cook rooms) and cold (coolers/freezers) environments.
• Ability to understand and follow written and verbal directions.
• Bilingual (English/Spanish) preferred but not required.
• Strong attention to cleanliness, safety, and organization in a fast-paced environment.
• Ability to work weekends, holidays, and varied shifts.
