POSITION SUMMARY:


Responsible for preparing ingredients, cooking menu items to order, and maintaining a clean, safe, and stocked workspace in a high-paced, confined environment.  Responsibilities include prepping food, managing a station (grill, fryer, etc.), following sanitation standards, and often assisting with loading-and-unloading the truck. Ensure that all food is prepared to standards according to customer preferences and dietary requirements.  Maintain high levels of hygiene and cleanliness in the kitchen.  Follow all food safety procedures, including handling and storing food correctly.  Order and manage inventory of food ingredients and supplies.  Ensure that all cooking equipment is clean and in good working order. 



The incumbents are expected to work in accordance with the mission, purpose, and values of the Colusa Indian Community Council.



The Outdoor Eatery consists of two eateries—Acorn Bar & Grill and Jade Grill. The hours of operation are Wednesday through Saturday, 10:00 a.m. to 7:30 p.m.



Currently, there are multiple openings—three (3) Lead Cooks and six (6) Cooks—for full-time and part-time positions. 



ESSENTIAL DUTIES and RESPONSIBILITIES: The duties are not limited to the following:



  • Set-up stations, chop vegetables, butcher meat, prepare seafood and sauces before service;

  • Execute menu items quickly and accurately, ensuring high-quality food during fast-paced, high-volume service;

  • Cook and prepare a variety of fast foods, including deep-fried foods according to production guidelines and standardized recipes; may be required to cook and prepare specialty food (e.g., seafood/raw bar (e.g., sushi, oysters), international (e.g., dim sum, tapas, foie gras));

  • Comply with all health regulations, including proper food storage, temperature controls, and cleaning surfaces to maintain a sanitized station; report maintenance issues as necessary;

  • Monitor stock levels, submit stock orders, and assist in restocking or unloading inventory;

  • Assist with cleaning the truck interior and exterior, managing waste, and possibly drive or park the truck at event sites;

  • Set-up tables and chairs outside the Outdoor Eatery;

  • Develop and review menu schedule to determine food requirements including variety and quantity of food for preparation and to assemble supplies and equipment needed for daily cooking activities and scheduled events;

  • Greet customers and ascertain what each customer wants or needs;

  • Serve orders (food and beverage) to customers at windows, counters, or tables;

  • Maintain knowledge of current sales and promotions, policies regarding payment, exchanges and returns, and security practices;

  • Open and close point of sale (POS) system, performing tasks such as counting money, separating charge slips, coupons, and vouchers, balancing cash drawers, and making deposits; maintain records related to sales;

  • Review inventory and consider budget when suggesting the purchase of supplies for the kitchen;

  • Instruct customers on how to use self-serve equipment as needed;

  • Communicate with management regarding guest or vendor requests or concerns; and

  • May perform other duties commensurate with the functions and level of the position.


 


MINIMUM QUALIFICATIONS:


Experience:



  • Generally, 1 to 2 years of previous line cook experience. Working in a Outdoor Eatery,  is highly desirable. Specialized experience in menu creation is highly desirable.


 


Other Requirements: 



  • Must be 21 years of age, at the time appointment, for those hired to serve alcoholic beverages.

  • Must possess and maintain a Food Handlers Card or SERV Safe certification.

  • Must possess and maintain a Responsible Beverage Service (RBS) certification.

  • Valid California driver’s license.

  • Must have the ability to work a changing schedule, including nights, holidays, and weekends.



SUPERVISORIAL DUTIES: None



KNOWLEDGE, SKILLS, and ABILITIES:



  • Promote and support company image standards;

  • Comply with company meals and rest break policies;

  • Consistently report to work on time and in accordance with the assigned work schedule;

  • Communicate with supervisors;

  • Present a neat, clean appearance in uniform;

  • Adhere to all federal and state regulations, including verifying age with a valid I.D. for any age-restricted sales;

  • Follow the work schedule as posted, unless a change in schedule is arranged with the Retail Store Manager or designee;

  • Stay familiar with the policies and safety protocols, and bulletins;

  • Ensure store management is made aware of any sales, cash, or operating discrepancies or problems;

  • Properly uses the time clock, signs a timecard verifying all hours worked at the end of the pay period;

  • Work in a safe manner at all times and report all accidents immediately;

  • Ability to read and comprehend instructions, short correspondence, and memos;

  • Ability to add and subtract to make change, complete pay point reports, and account for numbers of a variety of products during vendor check-in;

  • Ability to perform these operations using units of American money and quantity;

  • Cash counting required daily;

  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.

PHYSICAL REQUIREMENTS:


The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job, the employee is required to:



  • Mobility and Dexterity:  Incumbents in this class require stooping, kneeling, reaching, standing, walking, fingering, grasping, feeling (e.g., sense of touch), and repetitive motion.  Must be able to stand for long periods (up to 9 hours).

  • Lifting, Carrying, Pushing and Pulling:  Incumbents in this class will regularly exert up to 10 pounds of force or occasionally exert up to 25 pounds, or in some occasions lift and/or move up to 50 pounds, and/or a negligible amount of force frequently or constantly to lift, carry, push, pull or otherwise move objects.

  • Vision:  Incumbents in this class are required to have close visual acuity, with or without corrections, to prepare and analyze data and figures, transcribe, view a computer screen, read, etc. 

  • Hearing/Talking:  Incumbents in this class are required to perceive the nature of sounds at normal speaking levels with or without correction and have the ability to receive detailed information through oral communication.  Require the employee to express or exchange information or ideas by means of the spoken word.

The work environment characteristics described here are representative of those an employee encounters while performing the essential functions of this job.



  • While performing the duties of this job, incumbents will work in high-pressure, fast-paced, and confined spaces.  Requires working in varied weather conditions and during nights/weekends.

  • The noise level in the work environment is usually above moderate.

  • Work schedules may vary at any time, as required by business operations, be adjusted for definite or indefinite periods of time to increase, decrease, or otherwise change any non-exempt employee’s daily, weekly, and/or shift hours of work and/or the days an employee will report for work.

  • Incumbents in this class may be subject to disruptive and confrontational people. 


 



OTHER REQUIREMENTS:



  • Drug Test and Background Checks: Will be subject to pre-employment drug testing, background checks before appointment, and random drug testing during employment.

  • Hours of Work: Incumbents will be required to work weekends, holidays, irregular hours, and after normal business hours, as a common practice for those who work in the retail industry.
