The Food & Beverage Manager directs all aspects of the food and beverage operations at Ojo Caliente Mineral Springs Resort & Spa in accordance with the goals, objectives and culture set forth by resort management. Maintains a high standard of quality with regards to guest satisfaction, F&B operations, employee morale and satisfaction, safety, compliance, and sanitation. Responsible for the delegation and completion of work in F&B Department. Collaborates with all other Department Manager to ensure excellent guest experiences.
ESSENTIAL JOB FUNCTIONS / RESPONSIBILITIES:
1. Manages all F&B staff in the restaurant, bar, and kitchen.
2. Ensures an excellent guest experience.
3. Ensures the department meets all the appropriate quality standards.
4. Strives to make sure the department’s labor and expenses are always optimized.
5. Oversees and manages all staff schedules.
6. Responsible for producing accurate food and beverage inventories, submitting the information to the Accounting Department on or before the third calendar day of the month.
7. Responsible for conducting quarterly operating equipment (glass, china, flatware, etc.) inventories as indicated.
8. Manages the purchasing of products and goods.
9. Maintains excellent relationships with primary and secondary vendors.
10. Keeps F&B staff informed through daily communication and pre-shift meetings.
11. Attends and actively participates in all required resort meetings.
12. Manages the development and implementation of F&B training programs.
13. Works in conjunction with Human Resources representatives to ensure proper execution of human resources-related functions (interviewing, hiring, staffing, training, performance management, employee relations, documentation, etc.)
14. Maintains a culture of service excellence, models our mission and core values.
15. Coaches employees to conduct themselves according to Ojo’s mission and core values.
16. Responds to guest comments, and complaints in a timely manner and ensures that the guest’s expectations are exceeded.
17. Ensures the highest quality of food and beverage products.
18. Effectively manages food and beverages costs to remain within budgeted parameters.
19. Responsible for menu engineering and pricing.
20. Is the subject matter expert regarding F&B systems.
21. Ensures the dining outlets maintain the highest quality service and hospitality.
22. Ensures the dining outlets have great appearance, are well maintained, sanitary, in great repair and organized.
23. Ensures the upkeep of all operating equipment, utensils, and tools.
24. Ensures that F&B staff meets uniform, cleanliness, and safety standards.
25. Ensures the highest possible standard of sanitation.
26. Ensures that safety and sanitation are of the highest possible standard in both the front and back of house.
27. Ensures strict compliance with State and Federal regulations.
28. Maintains or assists in maintaining an outlet “communication center” or bulletin board, posting schedules, guest comments, staff assignments, menu information, etc.
29. Completes management reports
30. Maintains positive staff morale by leading with positivity and empowering a productive and fun work environment.
31. Handles any other business requests not mentioned above as required.
Requirements
1. Minimum of 5 years in a food and beverage management position, preferably at a resort with at least two outlets.
2. Knowledgeable of all types of cuisines, wines, beers, and spirits.
3. Experience in overseeing/managing a staff of at least 25 food and beverage employees.
4. Experience in F&B/resort accounting, budgeting, and P&L management.
5. Very strong computer skills: prior experience using F&B software required.
6. Able to effectively collaborate with department managers and supervisors to ensure all objectives and budgets are met.
7. Strong collaborative, critical thinking, and problem-solving skills.
8. Exceptional communication skills - written and verbal.
9. Bi-lingual highly desirable. (English and Spanish)
10. Must possess a valid New Mexico Food Handler’s Permit and Alcohol Server’s License prior to hire and maintain both in active status throughout employment.
11. Ability to work a flexible schedule including days, nights, weekends, and holidays.
12. Ability to work in an environment where the employee is frequently exposed to heat, steam, and noise.
13. Ability to stand for eight or more hours per day, sit, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing up to 50 pounds.
14. The position requires manual dexterity; auditory and visual skills; and the ability to follow written and oral instructions and procedures.
