Job Summary

The Garde Manger reports to the Executive Chef and is accountable to him for the running to standard of the areas assigned to the Garde Manger and his Team Members. He produces high-quality products that elicit very high levels of Guest satisfaction, keeping a keen eye on food costs. He follows through on special projects as indicated by the Executive Chef. He liaises with the Sous Chefs for the execution of special functions.

Duties and Responsibilities 

• Prepare and present cold dishes, including salads, cold appetizers, sandwiches, charcuterie, and plated cold entrées.


• Create decorative garnishes, fruit and vegetable carvings, and buffet displays.


• Ensure high standards of food presentation, quality, and consistency.


• Maintain a clean and organized workstation, following hygiene and sanitation standards.


• Monitor inventory and assist with ordering ingredients for cold kitchen operations.


• Work closely with other kitchen staff to coordinate food preparation and service.


• Adhere to food safety regulations and proper storage techniques for cold items.


• Assist in menu planning and development for cold kitchen offerings.


• Train and supervise junior kitchen staff as required.


• Requires standing for extended periods.


• Ability to work flexible hours, including weekends and holidays.


• Exposure to cold storage areas and kitchen equipment.

Qualifications & Skills:

• Culinary certification or equivalent experience in a high-volume kitchen.


• At least 3 years of proven experience in a Garde Mange or similar cold kitchen role.


• Strong knife skills and expertise in food presentation techniques.


• Knowledge of food safety, storage, and HACCP guidelines.


• Creativity and attention to detail in food presentation.


• Ability to work efficiently in a fast-paced environment.


• Team player with good communication skills.
