Join the Opening Team at JawFish Restaurant!


 


Something new is making waves in Portland, and we want you to be part of it.
The soon-to-open JawFish Restaurant (11707 NE Airport Way, Portland, OR 97220) is building its founding culinary team — and this is your chance to get in on the ground floor of an exciting project.


 


JawFish is part of a bold, large-scale revitalization project with the restaurant opening in late October or early November: the hotel next door is being completely renovated into a dual-branded Hyatt, with openings planned for 2026. While the hotel project takes shape, JawFish will be the first to open its doors — setting the stage for the property’s exciting new chapter. Right now, the restaurant may be under construction, but by late fall we’ll be ready to welcome guests.


 


We are hiring Line Cooks to join our kitchen brigade. If you’re passionate about food, thrive in a fast-paced environment, and want to help shape the identity of a brand-new restaurant, this is the place for you.


 


Line Cook is an essential and dynamic member of the kitchen team responsible for the precise execution of menu items during peak service. This role requires mastery of multiple cooking techniques and the ability to rotate stations efficiently while maintaining speed and quality.


 


Key responsibilities typically include:




  • Station Expertise: Fluently operating and managing the grill station for steaks and proteins, the sauté station for sauces and delicate items, and the fryer station for crisp, accurately cooked sides.


  • Service Execution: Cooking and plating all dishes accurately and consistently according to established recipes and plating guides, ensuring all food meets the highest quality standards before being sent to the dining room.


  • Mise en Place: Completing all assigned prep work (cutting, portioning, stocking, marinating) to ensure the station is fully stocked and organized for efficient service.


  • Organization & Safety: Maintaining strict cleanliness and sanitation standards at all times, including the proper storage and rotation of food inventory.


  • Communication: Effectively communicating with the Expo and other kitchen staff to manage ticket times and coordinate dish completion.


This role is ideal for a focused, high-energy individual who excels under pressure and is capable of rapidly switching focus across various cooking methods.
