Job Description - Line Cook



The Portland Regency Hotel & Spa is looking for a full-time Line Cook to join our culinary team! A beautiful Historic Hotel of America located in the heart of Portland's Old Port District.


These are year-round, full-time position, approx. 30- 40 hours per week. Weekends/holidays are a must.

Summary: Prepares and cooks all breakfast a la carte and/or lunch (and employee meal), and/or dinner orders as well as banquet functions. Ability to successfully perform all essential functions of two of the four kitchen stations.


 


Essential Duties and Responsibilities: include the following. Other duties may be assigned.


 



  • Unlocks all doors and coolers at the beginning of the shift.


 



  • Prepares all food relating to breakfast, lunch, or dinner service.


 



  • Prepares daily lunch or dinner specials and a daily side salad or side dish of the day.


 



  • Checks employee meal status and prepares as needed. 


 



  • Listens and calls back to the expeditor.


 



  • Sets up and breaks down the breakfast, lunch, or dinner line.


 



  • Changes ice in walk-in #2 at the end of the shift.


 



  • Keep cold food below 40 degrees and hot foods above 140 degrees.


 



  • Practice the first-in/first-out rule on all beef, poultry, seafood, dairy and produce.


 



  • Assists in preparing and serving lunch or dinner banquets as time allows.


 



  • Assists with preparing and serving breakfast, lunch, or dinner banquets as time allows.


 



  • Cleans and sanitizes the work line at the end of the shift.


 



  • Responsible for disposing grease from the grease trap (in the back storage room) on a daily basis, as well as recording the amount of grease collected. 


 



  • Locks all doors and coolers and returns keys to the Front Desk at the end of the shift.


 



  • Records temperatures at the end of shift on refrigerator-temperature log


 



  • At the end of the shift, make sure that everything is properly wrapped and labeled.


 



  • Maintains a clean and safe work area.

Mathematical Skills


Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent, and to draw and interpret bar graphs.

Education and/or Experience


Bachelor’s degree (B.A.) from a four-year college or university, or one to two years related experience and/or training; or equivalent combination of education and experience.


 


Language Skills


Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one on one and small group situations to customers, clients, and other employees of the organization.


 


Reasoning Ability


Ability to apply common sense understanding to carry out detailed, but uninvolved written or oral instructions. Ability to deal with problems involving few concrete variables in standardized situations.

Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust and focus.

While performing the duties of this job, the employee is regularly exposed to moving mechanical parts and fumes or airborne particles. The employee is occasionally exposed to wet and/or humid conditions, toxic or caustic chemicals, extreme cold, extreme heat, risk of electrical shock, explosives, risk of radiation, and vibration. The noise level in the work environment is usually loud.
