Our Pastry Cooks function as a part of the commissary production team with a focus on pastries. This position is responsible for preparing, assembling, and packaging food items while adhering to food safety, food handling, and sanitation procedures. They will also focus on daily cleaning tasks and upkeep of the commissary space.
Essential Job Functions
Demonstrating skill in baking pastries, desserts, cakes, cookies, sweets, and pies.
Applying classic pastry baking techniques when preparing traditional pastries, including laminated pastries.
Monitoring equipment and ensuring all specialized pastry baking tools are in working order.
Bake pastry items according to pre-established recipes and package products according to commissary guidelines.
Decorate pastries in a consistent style.
Maintain inventory of prepped ingredients.
Properly label and store ingredients.
Help maintain a clean and safe work environment to comply with sanitation, ServSafe, and safety requirements.
Adhere to the details of the operation, including all operating standards, food standards, service standards, and policies and procedures as outlined in the company handbook.
Perform dishwashing duties to ensure clean and sanitized kitchen tools are available for use.
Other duties and tasks assigned.
Pastry-making experience, including laminated pastry production (viennoiserie) required.
Certification of culinary training or apprenticeship preferred.
Demonstrates adequate pastry skills and operations.
Able to stand for length of shift.
Able to life 25 pounds.
