Job Description - Pastry Cook -Overnight

Description

 

As a key member of the commissary production team, the Pastry Cook focuses on the preparation and packaging of high-quality pastries. This role involves following food safety and sanitation protocols, executing daily cleaning tasks, and supporting the overall maintenance of a clean, organized commissary space.

Essential Duties & Responsibilities

  • Prepare and bake a variety of pastries, desserts, cakes, cookies, sweets, and pies.
     
  • Apply classic and advanced pastry techniques, including lamination and other traditional methods.
     
  • Follow established recipes and ensure consistent quality and presentation.
     
  • Decorate pastries with attention to detail and consistency in style.
     
  • Package finished products according to commissary standards.
     
  • Maintain accurate inventory of prepared ingredients; label and store all items properly.
     
  • Monitor and maintain specialized pastry equipment, ensuring all tools are clean and in working condition.
     
  • Uphold all food safety, handling, and sanitation practices in compliance with ServSafe and company standards.
     
  • Assist with dishwashing and general cleaning to support a sanitary work environment.
     
  • Adhere to all operational guidelines, including food quality standards, service expectations, and policies outlined in the company handbook.
     
  • Perform other duties as assigned to support commissary operations.
     

Requirements

Pastry-making experience, including laminated pastry production (viennoiserie) required. 

Certification of culinary training or apprenticeship preferred.

Demonstrates adequate pastry skills and operations.
