Job Description - Prep Cook

Qualifications:
High school diploma or G.E.D. required, Culinary vocational program or certificate/diploma required. Candidates must pass background and drug screening per Kaw Nation Gaming Commission regulations to obtain a gaming license (Medical Marijuana cards are accepted). Flexibility to work any shift as needed or assigned, including weekends, evenings, and holidays.

Responsibilities and Duties:
A prep cook plays a vital support role in the kitchen by assisting with the preparation of ingredients and ensuring the timely and efficient delivery of high-quality dishes to guests. They work closely with chefs and other kitchen staff to gather, portion, and distribute ingredients to the appropriate stations. Common responsibilities include retrieving items from storage, washing and chopping produce, measuring ingredients, and maintaining an organized prep area to help keep kitchen operations running smoothly.

Completing task on the prep list from the Head Chef or other kitchen manager.
Parboiling food, reducing sauces, and starting first steps in various dishes.
Adhering to all relevant nutrition and sanitary regulations and standards.
Review storeroom, walk-in fridge, and freezer to check for low-stock items. Keep record of remaining inventory and provide a list of supplies to management for ordering.
Help staff unload produces from delivery trucks and stores them properly.
Throughout the day, switching between multiple jobs to assist other kitchen staff as needed. Including washing dishes and sanitizing floors.
Excellent verbal communication skills.
Ability to remain calm under pressure, especially during peak service hours.
It is very important that prep cooks complete their duties correctly, even in chaotic moments.
