Scope of Role

The Production Breaker is a versatile and highly skilled production team member responsible for providing coverage and operational support across multiple key positions on the line, including tortilla roller, Vemag operator, wrapper operator, and stacker. This role ensures continuous production flow by stepping into different positions as needed, maintaining quality standards, and supporting overall line efficiency. 


Requirements

  • Ability to read, write and comprehend information.  
  • Basic math skills for measuring and weighing materials. 
  • Ability to lift and carry up to 50 lbs regularly. 
  • Willingness to work flexible hours, including overtime and weekends as needed. 

Key Functional Skills/Knowledge

  • Flexibly rotate and perform tasks in various production roles, including but not limited to: 
  • Tortilla Roller: Operate and monitor tortilla rolling equipment, ensuring correct size, shape, and consistency. 
  • Vemag Operator: Manage the Vemag portioning machine to accurately deposit fillings, monitor weights, and make necessary adjustments. 
  • Wrapper Operator: Operate wrapping machinery to ensure consistent, secure wrapping of products according to specifications. 
  • Stacker: Stack and organize finished products for packaging and distribution, verifying counts and maintaining product integrity. 
  • Maintain high standards of food safety, quality, and GMP compliance across all roles. 
  • Monitor equipment and product quality in each position, promptly identifying and reporting any issues or deviations. 
  • Complete all required production documentation accurately and in a timely manner. 
  • Assist with line changeovers, setups, and sanitation activities to ensure smooth transitions and minimal downtime. 
  • Communicate effectively with supervisors and team members to support coordinated workflow and problem-solving. 
  • Follow all safety protocols and use appropriate PPE in each position. 

Required Qualifications & Experience

  • High school diploma or equivalent. 
  • Demonstrated ability to learn and perform multiple technical tasks quickly and accurately. 
  • Strong understanding of basic food safety practices, GMP standards, and operational hygiene. 
  • Ability to read and follow detailed work instructions and production schedules. 
  • Basic math skills for portioning, documentation, and quality checks. 
  • Physical ability to stand for extended periods, lift up to 50 lbs, and perform repetitive motions. 
  • Flexibility to work varying shifts, overtime, and weekends as required. 

Preferred Qualifications & Experience

  • 1–2 years of experience in a food manufacturing or production environment. 
  • Prior experience operating tortilla rollers, Vemag portioning equipment, wrapping machinery, or similar food production equipment. 
  • Cross training in multiple production line positions within a high-speed manufacturing environment. \
  • Knowledge of HACCP principles and experience with food safety audits. 
  • Mechanical aptitude and comfort with minor equipment adjustments and troubleshooting. 
  • Bilingual (Spanish & English) 

Work Environment

  • Manufacturing facility with variable temperature zones (hot and cold environments). 
  • Exposure to raw and cooked food ingredients; strict PPE compliance required. 
  • Standing, bending, and repetitive hand and arm movements throughout shifts (up to 10 hours). 
  • Frequent lifting and carrying materials up to 50 lbs.
