Production- Bun Mixer 839 3rd shift

Job Purpose

Ensures the preparation of quality baked goods (bread, buns) by working on the production line in a variety of different areas as described below.

Essential Job Results

1. Produces quality dough by dumping the ingredients prepared by setup; adding additional ingredients per recipe; using dough mixers to mix; using the timer and guidelines for consistency; understanding consistency and changing the mix if needed.


2. Assists in the production of quality dough by following a recipe; weighing and measuring highlighted ingredients according to chart; and delivering to mixers for completion.


3. Ensures the baking of quality bread by knowing when the bread is ready to go from the proof box to the oven; and loading into the oven.


4. Assists in the quality production of granola by following recipe; combining ingredients; and mixing to desired consistency.


5. Ensures quality bread products by operating the divider machines; keeping track of weights and temperatures; observing and understanding the presentation of the product; eliminating below standard dough loaves; and assists with pushing racks into proof box.


6. Loads oven by placing unbaked goods from the rack (trays from the bottom up) into the oven for baking.


7. Maintains efficient conveyor system for bread production by putting pans on the conveyor line when needed and removing pans from the line to avoid a jam and cleaning as needed.


8. Assures end result is a quality product by understanding each of the products and suggesting changes based upon weights and size of various products.


9. Documentation on product logs including color, height, weight, and time.


10. Assists on bread line by placing full pans onto racks top down and helping to move racks to proof box.


11. Assists in the production of great granola.


12. Maintains good manufacturing process by wearing hairnets, beard nets, gloves, shoes, and white uniforms.


13. Maintains a safe and clean work environment by cleaning up as needed and being aware of necessary sanitation and safety procedures.


14. Maintain line of communication with supervisor, coworkers, General Manager and Production Manager.


15. Contributes to team effort by accomplishing related results as needed.


16. Other duties as assigned.

Education and/or Experience

• High School Diploma/GED equivalent required

Knowledge, Skills, & Abilities

• Knowledge of sanitation, and safety procedures


• Knowledge of Natural Ovens products


• Knowledge of all machine operations


• Understand allergen program and follow procedures


• Good communication skills


• Ability to read, write and understand and carry out simple instructions


• Ability to read and follow recipes and charts


• Ability to perform simple mathematical calculations


• Ability to use the scale and measure weights


• Ability to frequently lift/carry objects weighing one to fifteen pounds of varying sizes and shapes a distance of one to one hundred feet


• Ability to push finished batch to product line


• Ability to occasionally lift 50 pounds


• Ability to operate the hoist


• Ability to perform repetitive tasks


• Ability to deal with several variables and adapt to changes in the environment when mixing


• Ability to perform squatting, crouching, twisting, pushing, pulling, climbing, bending, kneeling, or stooping
