Job Description - Regional Director of Nutritional Services (SNF)



Full-time


Description

The Regional Director of Nutritional Services provides hands-on leadership and operational oversight for dietary and food service programs across multiple skilled nursing facilities. This role requires a strong culinary and kitchen management background, the ability to step into facility kitchens when needed, and proven leadership of Nutritional Services Directors at the building level. The Regional Director ensures regulatory compliance, high-quality patient dining experiences, cost and labor control, and alignment with clinical nutrition standards in collaboration with Registered Dietitians.

Travel is often required for this role.

Operations & Culinary Leadership

  • Provide direct oversight and support to Nutritional Services Directors in each assigned facility
  • Demonstrate hands-on ability to run a kitchen, including cooking, production oversight, and service flow when needed
  • Ensure consistent food quality, presentation, taste, and patient satisfaction across all facilities
  • Standardize menus, recipes, and production processes while allowing for patient preferences and facility needs
  • Support facilities during staffing shortages or performance improvement initiatives
  • Support LHMSH culture by promoting “Friendly, Positive, and Focused on Excellence”.
  • Protect the legal, financial, and moral well-being of Larry H. Miller Senior Health.

Team Leadership & Development

  • Lead and mentor Nutritional Services Directors to help ensure compliance and achieve financial results
  • Conduct quarterly calls and regular check-ins with Nutritional Services Directors to review performance, goals, and challenges
  • Assist with hiring, onboarding, training, and corrective action as needed
  • Foster a culture of teamwork, accountability, and patient-centered service

Regulatory Compliance & Survey Readiness

  • Ensure compliance with federal, state, and local regulations governing food service in skilled nursing facilities
  • Prepare facilities for state and federal surveys, including mock surveys, audits, and corrective action planning
  • Lead dietary survey response efforts and ensure timely implementation of plans of correction
  • Maintain accurate documentation, policies, and procedures related to dietary operations

Clinical Coordination

  • Coordinate closely with Registered Dietitians to ensure clinical nutrition standards are met
  • Support implementation of therapeutic diets, modified textures, and nutrition care plans
  • Ensure accurate menu substitutions and documentation in accordance with diet orders

Financial & Labor Management

  • Manage food, supply, and labor costs across the region
  • Analyze budgets, P&Ls, and key performance indicators; implement corrective actions as needed
  • Ensure effective staffing models, scheduling, and productivity standards
  • Reduce waste while maintaining quality and patient satisfaction

Travel & Facility Support

  • Travel regularly to assigned facilities to provide on-site leadership, audits, and support
  • Serve as a regional resource during surveys, leadership transitions, or operational challenges
  • Communicate regional trends, risks, and successes to the President

Requirements

Required

  • Proven experience running a commercial or healthcare kitchen, including hands-on cooking
  • Multi-site or regional leadership experience in healthcare food service, skilled nursing, or senior living
  • Strong knowledge of skilled nursing dietary regulations and survey processes
  • Demonstrated ability to lead and develop managers and teams
  • Willingness and ability to travel regularly between facilities

Preferred

  • Certified Dietary Manager (CDM) or similar credential
  • Experience working with Registered Dietitians in a long-term care setting
  • Budgeting and cost-control experience across multiple locations
