PRINCIPLE DUTIES AND RESPONSIBILITIES
The registered dietitian acts in the capacity as an integral part of the food and nutrition department by acting in part as a quality assurance officer, educator and mentor. Review and oversight may include, but is not limited to, the following: food service production from the point of preparation through service with regularly scheduled audits to ensure the safety and quality of foods served to residents.
- Perform and complete the job description tasks of the food service director (FSD) as needed or as required. Example of tasks include, but are not limited to, the following:
- Daily checks of food services systems by us of department checklist to ensure that all are in compliance. Examples include, but are not limited to, the following: refrigerator, freezer temperature logs, cleaning schedules, work schedules, left over policy, substitution lists, time frame for meals and production sheets for food and fluids are being followed, dish machine PPMs, three-compartment sink and red bucket QUATs, food tray line temperatures and quality
- Update diet changes in tray card system in a timely manner to ensure diet accuracy
- Tracks on new admits as pertains to food and nutrition services. Examples include for plans of care, care conferences, weight and skin committee, standards meeting and/or other meetings as assigned by the administrator
- Interview residents upon admission for food preferences, likes, dislikes and allergies
- To interview residents and/or family members upon request
- Begin the new admit nutrition assessment by noting the food preferences and signing off
- Monitor food delivery, storage, production and service systems-this includes checking inventory upon delivery, checking physical inventory prior to placing an order, production sheets and adherence to diet orders
- Monitors safety and sanitation-makes sure cleaning schedules are posted and followed,
- Develops plans of correction with staff for any department deficiencies
- In-services dietary staff once a month to ensure competency
- Attends facility meetings as dictated by administration
Responsible for all nutrition assessments as dictated by the Minimum Data Set (MDS) and per regulations and changes in plans of care as needed. Includes, but is not limited to, the following:
- New admit assessments
- Quarterly/Annual assessments per the MDS schedule as provided by the MDS coordinator
- Weight changes-losses, gains and gradual changes
- Other assessments such as the MDS and CAA summaries
- Complete plans of care and update as needed
- Attend weight variance, skin and dining committees
- Attend other committees and/or meetings as assigned by administration
- Conducts routine in-services to all facility personnel on food and nutrition
- Completes quality assurance performance improvement audits. Audits may include-sanitation, meal satisfaction, steam table/tray line that may include production through distribution
- Routinely monitors dining and dining arrangement and provides feedback to the CDM and dining committee
- Performs other tasks as assigned by the administrator

Requirements
- Must be credentialed by the Commission on Dietetic Registration (CDR)
- Current status with CDR must be “active”
- Must be able to read, write and communicate in the English language
- Must be proficient in computer knowledge and application
- Minimum of 2-year RD experience preferred with at least 1-year in long-term care
- Must be able to mentor and educate
- Must have knowledge of Title 22 and OBRA regulatory guidelines for long term care and for residential care facilities preferred
- Must have good interpersonal and communication skills
- Must have the ability to work independently with minimal supervision
- Must be able to plan, organize, develop, implement and interpret Corporate and facility goals, objectives, policies and procedures
- Must be willing to be the acting food service manager as needed or required
