Job Description - FSY - COMMIS BAKER

Four Seasons Yachts is redefining ultra-luxury travel with its first yacht setting sail in January 2026. As part of the prestigious Four Seasons Hotels and Resorts, this 207-meter-long super-yacht features 14 decks and 95 spacious suites, each with floor-to-ceiling windows and private terraces — offering unmatched elegance on the high seas.

The shipboard Commis Baker plays a vital role in the culinary team, supporting the preparation and presentation of high-quality vienoisserie and baked goods that align with Four Seasons’ commitment to excellence. This position assists in executing a variety of baked items, including breads, petits gâteaux, homemade pastries, and special amenities, while adhering to the highest standards of hygiene and quality.

The Commis Bakers’s primary responsibility is to support the Chef de Cuisine Pastry and Bakery in preparing and serving bakery items efficiently, learning both traditional techniques and modern bakery artistry. Collaboration with the pastry team and other culinary members is essential to enhance the overall dining experience.

RESPONSIBILITIES

  • Assist in the preparation of a wide range of pastries, breads, and other such baked goods, utilizing scratch cooking techniques.
  • Learn and apply various bakery and pastry techniques, including baking, assembling, and decorating.
  • Follow established recipes and bakery standards to ensure consistency and quality in every item produced.
  • Contribute to the presentation of pastries and breads, ensuring they reflect the artistry of high-end work.
  • Ensure proper proofing times and storage techniques to maintain quality standards.
  • Help create a dining experience that exceeds guest expectations by supporting the delivery of high quality, beautifully presented breads and baked items.
  • Engage with guests when necessary to enhance their experience and foster appreciation for fine cuisine
  • Maintain cleanliness and organization in the pastry station, adhering to health and safety standards at all times.
  • Assist in the daily setup and breakdown of the pastry area, ensuring all equipment is sanitized and properly maintained.
  • Uphold standards of food safety and hygiene, conducting regular checks on ingredients and finished products to ensure compliance with health regulations.
  • Assist in monitoring inventory levels of pastry ingredients and communicate needs for restocking to the Chef de Partie.

      REQUIREMENTS:

      • Cruise ship experience mandatory
      • 21+ years old, no offensive tattoos allowed
      • A Culinary Arts Degree or relevant certifications is preferred, with a focus on pastry considered a strong asset. Basic food safety certification is preferred.
      • Minimum of 1-2 years of baker experience in a professional kitchen is preferred, with exposure to luxury hospitality or yacht/cruise line operations being advantageous.
      • Strong communication skills and proficiency in English are essential.
      • Familiarity with food and beverage operational systems is a must. Michelin Star restaurant or hotel experience, especially in a sushi context, considered ideal.
      • Willingness to live and work onboard the Yacht for extended periods, with travel to various international
        destinations.
