As part of the prestigious Four Seasons Hotels and Resorts, this 207-meter-long super-yacht features 14 decks and 95 spacious suites, each with floor-to-ceiling windows and private terraces — offering unmatched elegance on the high seas.
The Sushi Commis plays an essential role in the culinary team, assisting in the preparation and presentation of high-quality sushi and sashimi in alignment with Four Seasons’ commitment to excellence. This position supports the Chef de Cuisine Sushi in executing authentic sushi dishes while upholding the highest standards of hygiene and quality.

RESPONSIBILITIES
Assist in the preparation and presentation of various sushi and sashimi dishes, including nigiri, maki, and temaki, following established recipes and techniques.
Learn and demonstrate proper seafood selection, rice preparation, and the use of specialized sushi tools under the guidance of the Chef de Cuisine Sushi.
Follow the direction of the Chef de Cuisine Sushi to ensure consistency and quality in all dishes served.
Participate in creating visually appealing presentations that reflect the artistry of sushi making.
Maintain cleanliness and organization of the sushi station, adhering to health and safety standards at all times.
Assist with the daily setup and breakdown of the sushi area, ensuring all equipment is sanitized and properly maintained.
Uphold food safety and hygiene standards by conducting regular checks on ingredients and prepared dishes.
Communicate inventory needs for sushi ingredients to the Chef de Partie Sushi.
Work closely with the Chef de Cuisine Sushi and the kitchen team to facilitate smooth communication and coordination.
Support the training of junior kitchen staff on sushi preparation techniques and food handling practices as required.
Maintain a keen attention to detail in all aspects of sushi preparation, ensuring high standards of taste and presentation.
Ensure that all dishes align with Four Seasons’ standards for quality and presentation.

REQUIREMENTS:
Cruise ship experience mandatory
21+ years old, no offensive tattoos allowed
A Culinary Arts Degree or relevant certifications is preferred, with basic food safety certification mandatory.
Minimum of 1-2 years of experience in sushi preparation or related roles in a professional kitchen environment.
Strong communication skills and proficiency in English are essential.
Familiarity with food and beverage operational systems is a must. Michelin Star restaurant or hotel experience, especially in a sushi context, considered ideal.
Willingness to live and work onboard the Yacht for extended periods, with travel to various international destinations.
