Sous Chef at Leoncito – Upscale Modern Mexican Cuisine
Location: Las Vegas, NV
Salary: $60,000–$65,000

Leoncito, a premier destination for upscale modern Mexican cuisine in Las Vegas, is seeking an experienced and detail-oriented Sous Chef to join our team. This role focuses on ensuring smooth kitchen operations, maintaining high standards, and supporting the Executive Chef in leading our culinary team.

Position Summary:

The Sous Chef is responsible for assisting the Executive Chef in managing all aspects of kitchen operations. This includes training and mentoring the back-of-house team, overseeing food preparation, and ensuring adherence to quality, safety, and efficiency standards. The Sous Chef acts as the primary leader in the kitchen when the Executive Chef is unavailable.

Key Responsibilities:

  • Support the Executive Chef in planning, directing, and supervising kitchen operations and staff.
  • Monitor food preparation to ensure consistent quality and adherence to established standards.
  • Communicate product and supply needs to the Executive Chef and kitchen team.
  • Enforce compliance with food safety and sanitation guidelines.
  • Hire, train, mentor, schedule, and manage back-of-house team members, including addressing disciplinary issues.
  • Supervise all kitchen stations to ensure smooth and efficient operation.
  • Manage food quality and accuracy across all dishes.
  • Assist in monitoring food cost and employee payroll budgets.
  • Maintain open communication with the front-of-house team on updates such as menu changes, specials, and inventory.
  • Perform other operational duties as assigned by the Executive Chef.

Requirements

Experience & Skills:

  • Demonstrated experience in a high-volume kitchen environment, with a focus on operational efficiency and team leadership.
  • Strong organizational and time-management skills, with attention to detail.

Physical Requirements:

  • Ability to lift or carry up to 50 pounds or more.
  • Navigate all areas of the property efficiently.
  • Stand, walk, stretch, bend, and kneel for extended periods.
  • Maintain composure under pressure in a fast-paced environment.
  • Ability to work indoors, often exposed to noise and various environmental factors.
