JOB SUMMARY

 At Level 2 Steakhouse, we don’t just serve food—we craft unforgettable dining experiences with precision, care, and bold flavor. Located inside the Hilton Branson Convention Center Hotel, we’re known for our 28-day aged Certified Hereford Beef, premium seafood, and top-tier wine and cocktail lists. As Sous Chef, you’ll play a critical role in leading our culinary team, upholding the highest standards of execution, and pushing boundaries in pursuit of culinary excellence.

WHAT YOU'LL DO

As the Executive Sous Chef, you’ll play a key role in our kitchen’s success. In this role, you will:

  •  Assist the Executive Chef in overseeing kitchen operations, including food preparation, line management, and execution.
  • Lead by example with exceptional knife skills, plate presentation, and cooking techniques in a high-volume, upscale environment.
  • Train, develop, and mentor kitchen staff, ensuring consistency, teamwork, and a commitment to quality. 
  • Ensure compliance with health, safety, and sanitation standards, upholding all HACCP and brand guidelines.
  • Contribute to menu development by offering creative input that aligns with Level 2’s high standards and unique style.
  • Manage inventory, food cost controls, and waste reduction with a strong focus on operational efficiency.
  • Collaborate with front-of-house leadership to ensure seamless service and an exceptional guest experience.
  • Step into the role of the Executive Chef in their absence, taking full responsibility for kitchen operations.
  • Take on additional duties as assigned by management to support the smooth operation of the hotel.

WHAT YOU BRING

We’re looking for a culinary professional with a passion for excellence and leadership. To excel in this role, you’ll need:

  •  At least 5 years of progressive culinary experience in upscale or fine dining restaurants, with at least 2 years in a leadership role.
  • Expertise in steak and seafood preparation, with a refined palate and passion for high-quality ingredients. 
  • Proven ability to lead a team in a fast-paced, high-volume kitchen while maintaining precision and calm.
  • Strong understanding of kitchen operations, cost control, and inventory management.
  • ServSafe certification (or willingness to obtain).
  • A hands-on leadership style with a sharp eye for detail and an unwavering commitment to excellence.
