Job Description - Sous Chef - CrossPointe

SUMMARY OF ROLE


The CrossPointe Sous Chef is responsible for planning, directing, and supervising food preparation activities in the kitchen. This role involves overseeing  all kitchen functions to ensure high-quality meal execution and adherence to kitchen standards. Responsibilities include a variety of tasks such as cooking, plating, and prepping food for various meals. The Sous Chef must be able to follow and enforce instructions related to preparation methods, cooking techniques, plate presentation, portion and cost control, and sanitation protocols. This supervision ensures the efficient and effective operation of the commercial kitchen, dining area, and events center. Areas of responsibility include meal preparation and service for both Life Pacific East and CrossPointe events, served in or from the CrossPointe Café.


 


ESSENTIAL RESPONSIBILITIES


·       Provide oversight during service times to ensure consistency, adherence to safety guidelines, and timely execution of food service


·       Provide oversight of items to be prepped following lists provided by management team


·       Address needs as they arise in the weekly and seasonal flow of the campus activities


·       Prepare and cook menu items on planned rotational menus for the LPU East students and for CrossPointe events as directed by management team


·       Maintain a safe, professional, organized and efficient environment in the kitchen and dining areas


·       Ensure all operations function in accordance with Virginia and Montgomery County Health regulations


·       Maintain order, discipline and a healthy work environment in the kitchen


·       Produce high-quality dishes that follow the established menus and level up to CrossPointe’s standards, as well as to the customer’s requirements


·       Train auxiliary kitchen staff in order to provide the best results in minimum time


·       Label and stock all ingredients on shelves so they can be organized and easily accessible


·       Measure ingredients by washing and chopping vegetables, cutting meat, etc.


·       Undertake basic cooking duties such as reducing sauces, parboiling food etc.


·       Prepare simple dishes such as salads, entrees etc.


·       Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash etc.


·       Ensure all food and other items are stored properly


·       Comply with nutrition and sanitation guidelines


·       Perform other kitchen duties as assigned like daily lists and HACCP


·       Maintain and service all necessary kitchen equipment and supplies


·       Follow and assign Established Closing Duties


·       Weekday and weekend coverage in kitchen and events as assigned


·       Other duties and projects as assigned by the team leader


 


REQUIRED EXPERIENCE AND CAPABILITIES


·       Demonstrates humility and a growth mindset with an attitude of servant-leadership; placing serving over being served and collaboration over individualization


·       A commitment to The Foursquare “one-team” growth culture


·       At least 1 year of Sous Chef experience


·       Excellent verbal and written communication skills, clear communicator


·       Good collaboration and interpersonal skills


·       Ability to work effectively both independently and as part of a team


·       Organized, self-starter with a positive attitude


·       Demonstrated ability to prioritize, multi-task, create timelines and meet project deadlines; attention to detail


·       Adaptable and abile to learn quickly; good problem-solving abilityies


·       Ability to work onsite at CrossPointe


·       Experienced with Office 365


 


 


PHYSICAL REQUIREMENTS


Must have the ability to sit for extended periods of time; exhibit manual dexterity of fingers, hands and wrists; see and read a computer screen and printed material with or without vision aids; hear and understand speech at normal levels and on the phone; have the ability to understand and follow oral and written instructions; physical agility to lift up to 25 pounds.
