Specialty Meat Cutter and Trimmer

This non-exempt role reports to the Production Supervisor to fulfill specialty orders as a tenured specialist in cutting and trimming meats for high-end or exclusive cuts. Knowledge of all meats related to wholesale or retail packaging. This position works exclusively in a technologically advanced refrigerated processing room, following USDA handling guidelines. The position requires working in tandem with other departments including Quality Assurance, Warehouse, and Maintenance as well as line supervisors. 

  Key Responsibilities

• Practice good personal hygiene and cleanliness
• Ensure accuracy of case weights and minimize product loss due to waste and spillage
• Process all products assigned to desired company specs
• Record accurate production data
• Daily set up and breakdown of all equipment used in production
• Comply to company GMPs
• Assist other processing room staff in all other tasks associated with production
• Other tasks as assigned from time to time

Qualifications

• Band saw expertise
• Training and certification provided for in-house equipment
• Food Safety training done on-site
• Follow stringent Food Safety preparation FDA guidelines, USDA regulated

Work Environment and Physical Requirements

• Standing 8 hours a day working on a production line whether it be on a chicken line, or beef table or working on a band saw
• Temperature controlled to meet USDA Regulations and must dress for the cool environment, to include all required room garments (gloves, hair net, lab coat)
• Repetitive hand motion, frequently pushing and pulling, occasional bending and lifting
• Department has a required stretching program performed twice daily
